Im so glad your here!!! I suddenly got the urge to bake this afternoon, after I put my baby to sleep, and read my Namaz I rolled up my sleeves and got to work.
I love to bake when I have the whole kitchen clean to my self, before i start the cooking for the day and everything is upside down.. lol
So I decided to make a Pineapple upside down cake from Scratch. I have been wanting to bake this for so many days now, because my dad had bought a whole jar of Fresh and peeled pineapple so I got that to use, and I used fresh cherries that were left over from Iftari, last night. The outcome ALHAMDULILAH!!!!! amazing.... like always with this cake.
Ladies you have to try this to believe me.. you'll never buy shop made cakes again, and your house is going to smell amazing...
Note: The results are best with this cake by using a Pyrex glass oven dish, Because it tends to flip over easily for better results.
Prep time 15 minutes
Bake time about 40-45 min or until a toothpick comes out clean
1/4 cup unsalted butter
1/2 cup packed light brown sugar
1 can of sliced pineapple (or you can use fresh pineapple sliced into rounds)
10-15 cherry's fresh or canned
1 and 2/3 cups sifted all purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
3/4 cup packed light brown sugar
1 large or 2 small eggs room temperature
1/4 cup buttermilk or yogurt
1/2 cup milk
1/4 cup pineapple juice, reserved from your pineapple or any pineapple juice
1 tablespoon vanilla extract
Preheat oven to 350'
Prepare topping first: In a large Pyrex baking dish drizzle the butter all across the pan making sure every part is covered. Secondly sprinkle the brown sugar all across the pan making sure to not leave any part empty. Last but not least, arrange your pineapples making sure there in good order, place a cherry in between the pineapples, and set aside.
In a large separate mixing bowl add flour, baking soda, baking powder and salt.
Sift together making sure everything is mixed well. Make sure to use exact measurements.
In a separate bowl add your sugar, butter (melted), and eggs mixing well with a hand mixer, or just a hand whisk, add in your buttermilk, juice, vanilla, and milk mixing it good until there are no clumps. (batter will be thick)
Pour the dry mixture into the wet ingredients and mix well, gently pour this over your arranged pineapple dish using the help of a rubber spatula. Making sure its all evenly coated, and place in the oven.
Bake for about 40-45 min or until a toothpick inserted comes out clean. If you notice the cake getting brown from the top and not cooked from the inside (depending on your oven) you can use foil to cover it from the top from browning.
Invert the cake on top of a cake stand or any plate, tray of your choice. "I usually put the serving tray on top of the cake pan and holding both tray with both hands i flip it over and let it sit for a couple of seconds and then slowly release".
P.S Did i forget to add how delicious this tastes with a little bit of Ice cream!!!!
