Eid Recipe: Chikpea Cholay Chawal with Kachumbar Salad

Salam everyone!! The holy Month of Ramadan is almost gone with just a few days left... May Allah Except all of our Dua's and Ibadath..  I'm sure everyone started planning their Eid get togethers, and arrangements... I have some yummy recipes I cant wait to share with all of you, That would especially taste great on Eid.. Today I'm sharing Hot fluffy Rice, atopped Chickpea Cholay garnished with Kachumbar salad..
Cooking Cholay on Eid is  almost like a family tradition in my house.. and serving it with boiled rice and a refreshing salad gives it a even more mouthwatering taste.
Heres the quick recipe... May you all have a Blessed Eid Mubarak..xx




Prep time 30 minutes if the chickpeas are already boiled
servings 4-6

Ingredeints:
1 lb chickpeas boiled and tender soft
1 large onion
1 tablespoon ginger garlic paste
3 medium tomatoes
2 green chilis
2 tablespoon lemon juice
1 tablespoon cumin powder
1 tablespoon coriander powder
1 tablespoon red chili powder
1 tablespoon salt
1/4 cup of cooking oil
1 teaspoon garam masala

Method:
First of all presoak your chickpeas usually over night in soaking water, and boil for about 2-3 hours the next day until theyre tender and soft.

In a large cooking pan add your oil, then start frying your onions, until they turn light golden brown.
Now add your ginger garlic, cumin powder red chili powder, coriander powder, salt and turmeric.. Cook for about 2 minutes until everything is spurred and mixed well.

Now add your tomatoes green chili peppers and lemon juice, cook for about 10 minutes and add in your chickpea cholay. Mix well and keep cooking for about 10 minutes more, you can add a cup or two of water for a thinner gravy Simmer on low heat sprinkle with garam masala  and remove from flame.

Ingredients for Kachumbar salad
2 large tomatoes diced
2 large cucumbers diced
1 cup of fresh cilantro diced
1 green chili diced
1 large red onion diced
1-2 tablespoons of lemon juice or vinegar
1 tablespoon olive oil
salt according to taste
Dash of black pepper

Method:
Mix everything in a large mixing bowl, and keep in the refrigerator until your ready to serve. Serve on top of your chickpea Cholay and white rice.
