Naz's Kitchen Fiesta Chicken Bake

 
Don't Know what to cook for dinner?? Don't have ideas?? Well I can help out my friends.. I made the most Yummiest Fiesta Bake ever Last Night, and couldn't wait to share the recipe with all of my wonderful viewers:)
My Sisters have gone to Umrah, 2 days ago, Mashallah!!  and I was staying at my parents house, helping out with all the guest. So Yesterday when I came home, The house was a disaster, I had piles of laundry and Dishes, and I had to think of a meal to put on the table for my Hubby and 3 Kiddos.. So I came up with this delicious fiesta Chicken bake, I put everything together in a bowl, transferred it to a baking dish, cooked it 40 minutes, and had dinner on table in no time.. All you need is Chicken, Spices, and some Veggies... "Its like Fiesta Food So Simple" :)

This will work out perfect for Ramadan Inshallah..Because you wont have to be standing around the stove for hours, and you can concentrate more on your Ibadath.. So bookmark the recipe, and don't forget to Follow me by email so you don't miss any new recipes.



Prep time 15 minutes
Cook time 40-45 minutes or maybe a little more, depending on your oven.
Serves 4-6

Ingredients
2 large Chicken breast or 1 large Chicken cut into pieces
1 heaped up spoon of ginger
1 heaped up spoon of garlic
2 green chili's
1 teaspoon Chaat Masala
1 teaspoon Tandoori Masala
1 tsp Dania powder
1 cup of vinegar
1 1/2 cup of yogurt
1/4 cup of oil
2 large potatoes
10 baby capsicum peppers
1 large onion
1 cup tomato sauce

Method:
In a large Mixing bowl add your washed, and cut chicken pieces, or large Chunks.
Add your 1 cup of vinegar and mix it all around the chicken and rinse off.

Then add in your ginger, garlic, chili's, chaat masala, tandoori masala, dania powder, oil, yogurt, tomato sauce,  and mix.

Now Chop your potatoes into large chunks or wedges, and any other veggies you might want to use like carrots, corn, broccoli, etc.. I used Baby Capsicum peppers and mix them with your ingredients into the bowl..

Heat your oven to 350 gas mark.. and Into your oven they go!! Place your Chicken veggie mixture into a pyrex dish, or baking pan, and cover with aluminum foil. ( I don't use pyrex dishes, because I had a horrible experience with them once when they cracked on me)  So I used  a normal baking tray. ( try to use a heavy duty one, so it wont stick)

Cook for about 40-45 minutes Remove the foil after about 25 minutes and turn the chicken pieces all around, (at this time you can sprinkle with more tandoori masala, or brush some of your favorite sauces on top as well.. I always like to add 2 tbs, ketchup 2 tbsp. barbecue sauce a few tsp of olive oil, and add cut coriander leaves, Then I brush them on top using a pastry brush, and Broil The Fiesta Bake for about 5 minutes...

After about 40-45 minutes Remove from Your oven. The Chicken should be nice, moist juicy and soft Serve over Hot White Rice, or you can serve with Homemade Naan, and Chutney.. YUMMM

I hope you all enjoy this recipe as much as I did.. Be creative, use any masalas you can. My sister called me up today, and said she made a oriental bake, She used the same recipe but, used oriental spices like soy sauce, chili sauce, garlic and onion powder etc.. with a whole bunch of Veggies. So its up to you! Be Creative..
