Classic Refreshing Moist Lemon Cake

This is by far one of my favorite Classical Recipes in the world.... A simple Classic Refreshing Lemon Cake..

You can have this day or night, hot or cold, feeling sick or tired you name it, and this cake will perk you up.. Bringing back old memories when you were a child, and even a plain lemon cake would mean the world to you!

 I use a simple recipe that calls for simple pantry ingredients, but my lemons are always fresh straight from my tree:) The lemon juice is so fresh giving the cake a refreshing lemony taste... I also use organic eggs to give it the best flavor and the nice lemony yellow color.. Last but not least this recipe calls for buttermilk.. to give it that soft moist texture and taste.. "Don't have buttermilk"??? don't stress.. add 2 teaspoons of lemon juice, or 2 teaspoons of vinegar to 1 cup of milk.. and you will have instant sour milk within minutes, and it works just as well as buttermilk... SO here we go Naz's Kitchen Fiesta Buddies......

Note: watch the cake, and your oven closely while baking.. so you don't over bake the cake...

Baking time 30-35 minutes

2 cups all purpose flour (maida)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup Cooking oil
1 1/4 cups sugar
2 teaspoons vanilla
2 eggs
1 cup buttermilk or sour milk

3-4 tablespoons fresh lemon juice
1 tablespoon zest of fresh lemons

1. Grease a 13-9" inch baking pan.
2. Combine flour, baking powder, baking soda, and 1/4 teaspoon salt put to aside.
3.In a mixing bowl beat butter for 30 seconds. Add sugar and vanilla, and beat until fluffy.
4. Add eggs one at a time, beating well after every addition, just till combined, add lemon juice, and zest of lemons
5. Add dry mixture and milk alternately to beaten mixture.
 6. pour into your greased pan.
Bake in a 350 oven for 30 35 minutes. or until a wooden toothpick comes out clean.
Place Cake in pan on a wire rack for 10 minutes. Cool thoroughly, and enjoy with your loved ones...

This cake is also great for birthdays, and get togethers, you can frost the cake with fresh whipped cream or butter cream frosting.. Yum yummm

    1. Hi, this recipe calls for Cooking oil, not butter because the oil, makes the cake nice and moist...:)
