Kulfa IceCream Cake With Chocolate and Cookie Topping

Springs just around the corner, and I think were all fed up of this cold winter weather... Were thinking, cool, sunny springy days here at my house.. Which made me fix up a great Dessert, for my boys..  If you've tried my recipe for my Devils Food Ice Cream Cake
, Then your going to go bonkers for this one.. A moist, fluffy yellow cake topped with Kulfa Ice Cream, and then topped with your favorite, Hershey's chocolate syrup, and cookies..

 I used Chocollatto cookies, but you can use any ones of your choice.. The dessert will need to set in the refrigerator for a few hours so it absorbs some of the ice cream..Its almost like a Tres Leches Cake.. So creamy, moist and juicy.. I like to cut the cake before I top it with the yummy goodness, but you can also poke holes in it using a clean finger, or chop sticks etc.. This would also make a great dessert, to Serve on Easter, with your loved ones... Make it the day before to save time, but save the toppings for the end! Be Creative use any toppings of your choice.

Heres my quick and easy recipe hope all of you will enjoy...
bake time 30 minutes
Prep time 15 minutes
oven 350 / Cool 1 hour

Ingredients for the cake
2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup butter or margarine
1 1/4 cups sugar
2 teaspoons vanilla
2 eggs
1 cup milk

pinch or drop of yellow food Coloring

1 quart or about 4-5 cups of  Kulfa ice cream ( or more according to your taste)
1 box about 12-14 chocolate biscuits I used (Chocolatto)
Hershey's syrup for the topping (Optional)

1. Grease a 13-9" inch baking pan.
2. Combine flour, baking powder, baking soda, and 1/4 teaspoon salt put to aside.
3.In a mixing bowl beat butter for 30 seconds. Add sugar and vanilla, and beat until fluffy.
4. Add eggs one at a time, beating well after every addition, just till combined, add your yellow food coloring.
5. Add dry mixture and milk alternately to beaten mixture.
 6. pour into your greased pan.
Bake in a 350 oven for 30 35 minutes. or until a wooden toothpick comes out clean.
Place Cake in pan on a wire rack for 10 minutes. Cool thoroughly.

Once cake has completely cooled, cut the cake, or either poke it with holes all over.. ( I usually cut the cake this is important so the ice cream goes through the cracks, or holes)
Thaw your ice cream, and using the help of a rubber spatula, gently pour it over your cake, spreading out evenly. Crush your cookies, in a bag, or using your hands, sprinkle on the top layer, now gently spread another layer of ice cream over the cookie crumbles, and repeat.
Place in your refrigerator, or freezer immediately after your done, and let it set for up to 2-4 hours or even up to a day for even better results..

Serve But be aware, if your on a diet, or losing wait, because this Dessert's as, good and sweet as dynamite.. your not going to be able to resist Having seconds:)
