Fresh Creme, and Fruit Cocktail Fiesta Cake





Today's recipe is for a indulging sweet dessert.. So sweet tasty and satisfying, that you might want to hit the Treadmill after you eat about 2 pieces of this.. This cake is packed with fresh fruit, or your favorite  fruit cocktail.. and slithered in fresh creme giving you all those intense yummy flavors..

I made this Twice last week, because I couldn't stop thinking about how good it was, almost like a Tres Leches Cake.. I had some fresh creme laying in the refrigerator, and I picked up a can of fruit cocktail, so I couldn't wait to get my hands on something new and delicious.. I used my famous cake recipe that I used for my Devils Food Ice Cream Cake, and my Kulfa Ice Cream Cake with Chocolate Topping  This is a perfect cake for Spring, it just gets you in the spirit, and It would be awesome for Easter, Party's or potlucks.. Give it a try and please let me know how you guys like it.. My family and friends, couldn't be more happier, and excited over this new fresh treat..

Prep time 15 minutes
Bake time 35 minutes
servings 12 pieces

Note: You can also used whip crème, or whipped topping and cherries for this dessert, which would make it even more devine...

Ingredients: For the Cake
2 cups all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup butter or margarine
1 1/4 cups sugar
2 teaspoons vanilla
2 eggs
1 cup milk
pinch or drop of yellow food Coloring(to give it that nice extra yellow color)


You will need 2 heaping cups of fresh cream ( or more according to your taste buds)
2-4 tablespoons of sugar to add to your crème if needed.
1 Large can about 4 cups of Fruit Cocktail (and the water from the cocktail)


Method:
1. Grease a 13-9" inch baking pan
2. Combine flour, baking powder, baking soda, and 1/4 teaspoon salt put to aside.
3.In a mixing bowl beat butter for 30 seconds. Add sugar and vanilla, and beat until fluffy.
4. Add eggs one at a time, beating well after every addition, just till combined, add your yellow food coloring.
5. Add dry mixture and milk alternately to beaten mixture.
 6. pour into your greased pan.
Bake in a 350 oven for 30 35 minutes. or until a wooden toothpick comes out clean.
Place Cake in pan on a wire rack for 10 minutes. Cool thoroughly.


Once your cake has cooled completely, Cut it through the middle carefully.

Now pour half of the sweetened juice from the cocktail onto the bottom layer so the cake can suck up all the juice.
Add half of your fresh Creme, top with half of the fruit cocktail, and gently place the second layer on top.
On the top layer, using the back of a pen or a chopstick poke little holes, and pour the other half of the cocktail juice on the top..
Once it has absorbed the juice add your fresh cream, and the rest of your cocktail.
Refrigerate and chill for about 1 hour.. and Enjoy with your loved ones!

The cake would look mind blowing in a Pyrex glass dish, but Ive had a nightmare before when it broke into pieces all over my kitchen counter, when I was taking my lasagna out of the oven, so I don't use those anymore... for now at least!!
