Classic Lemon Tea Cookies

I'm sure most of you that have been sticking around or have been following me for a while now can tell im obsessed with something to go with my tea.. Something like cookies, cakes, pastrys, etc..

So Today I made some good old Classic lemon Tea Cookies. The reason why their named Classic lemon Cookies is because my mom used to make these when we were little kids so the recipe has been in our family forever..
These little sweeties taste great with a cup of hot tea or coffee. You can even eat them as a snack.. I love to have cookies on hand for when I have unexpected, guests or friends that stop by.

 There even great for dunking with a glass of cold milk.. The lemon cookies are soft from the inside and crunchy from the outside, you can even put them under your broiler for a few seconds to get even crunchier, crispier cookies. I topped mines with some coconut before I put them into the oven.. You can  be creative and top them with sprinkles, nuts walnuts, or even make a glaze to go on top.. The Classic lemon cookies can even be stored in a airtight container for weeks in your refrigerator, even freezed, and then tawed for upto 1 month...
Heres the quick Recipe

Prep time 15 minutes
Cook time 10 minutes per batch
Oven 350- 170 cellius
Makes about 40 cookies

Ingredients:
1/2 cup butter or margarine ( or you can use cooking oil if you don't have either)
3/4 cup sugar
1 teaspoon finely shredded lemon peel
1 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1/3 cup milk
3 teaspoons lemon juice
1 3/4 cups all purpose flour

Method:
In a large mixing bowl beat butter and sugar on low speed with a hand mixer or with your regular wisk for about 1 minute.  Now add egg and vanilla mixing well. Then add your milk, and mix again.
 
In a separate mixing bowl add your flour, baking powder, baking soda, and mix well.
Make a well in the middle and add the wet mixture to the dry mixture and mix together to perform a smooth texture dough.
 
Using your spoon, or you can use your hands like I did. Place
 1 inch drops of the cookie dough on your greased cookie sheet about 1 inch apart, and place in your preheated oven for about 10-12 minutes per each batch. Or when you put a toothpick in the center of a cookie and it comes out clean.
You can sprinkle your cookies with coconut, or nuts, at this time... I used coconut
These are the tea cookies when their done. You can place them under your broiler again for another 2-3 minutes to get crispier cookies..
 
My 3 year old son couldent wait for the photo shoot, so he tried  sneaking one until I caught him while taking a picture.. lol

How to make The Best Gulab Jamun

So making them your self is just a wonderful feeling, and there just made with some simple ingredients in no time...Your Guest will be shocked.. Naz's Fiesta Style Beef Patties


I love burgers, hamburgers, chicken burgers, veggie burgers, sandwiches, the list can go on forever!!
So today I made some of my famous beef Pattie Burgers, That were so lip smacking good.
You don't need to go out and barbeque, you can cook or grill them straight on your stove top
and you still get the mouthwatering spicy, exotic taste every time.

With a side dish of sauted veggies, to go into your burger/sandwich or to eat with a fork on the side.
That are so raw, yet juicy, crispy and fullfilling.. These Patties are Great for fiestas party's get together's or you
can use the recipe for barbequing ( make sure to line the grill with foil).. and Have Fun..

Prep time:20 minutes
cook time: about 8-10 minutes for a batch of four
Stove top cooking

Ingredients: Servings For 10 Beef Patties
2 pounds lean ground beef
2 table spoons garlic powder
2 table spoon onion powder
2 table spoons grounded black pepper
1 table spoon salt (or according to taste)
2 eggs
1/4 cup of barbeque sauce
1 tablespoon of red chili powder for taste(optional, i like my food hot and spicy)
1 teaspoon Chinese salt
1 cup of crushed bread crumbs
1 large slice of bread
Oil and skillet, or tava for shallow frying, (or you can use a nonstick cooking Spray)


For the sauted veggies:
2 medium sized zucchini washed and cut
2 medium sized onions
2 bell peppers

For the garnishing:
10 hamburger buns
3 tomatoes
Naz's Ramadan Dip( the yummiest juiceiest dip ever)
cheese optional

Step by Step Method:
In a large mixing bowl add the garlic powder, onion powder, black pepper, salt, Chinese salt, barbeque sauce, eggs, chili pepper, egg bread crumbs,  and slice of bread. Mix everything together with your hands, Mushing it good so the bread including all the other ingredients will be nicely mixed. Put to aside
If your out of bread crumbs or don't have them on hand.. Don't Panic" get 4 slices of bread and put them 3,4 inches from your broiler in your oven, or you can use a toaster oven, and toast them well until they become coarse, and crispy..
 
Wash and Cut your veggies, I like to cut them round but, you can slice them as well.
Sprinkle them with a pinch of salt, and black pepper.
 
This is the skillet I used to make the patties.. My sister bought it for me as a gift from Target.. You can find one in any general store like Walmart etc. Or just use a simple tava if you don't have one.
 
Grease your Tava or skillet, with oil, or cooking spray. Make a Pattie 1 inch tall and 3 inches wide. and shallow fry the patties on each side for about 5 minutes..

when there nearly cooked, brush barbeque sauce on both sides gently using a pastry brush.

Once the patties are done. In the same cooking oil place your veggies in the skillet, and cook for just about 3-5 minutes stirring occasionaly..
 
 
Now assemble your bread, or your buns, add some of my Ramadan Dip ( or any mustard, mayonnaise, ketchup you preffer) add the sauted veggies, a slice of cheese, and ENJOY.......

A Perfect Cinnamon Tea Cake

I am a tea lover, and by being so I got my husband to love tea as well.. Especially in the colder winter days, you want to just snuggle with your ipad, or a book and drink your tea or cup of hot coffee.. That's not all I like to spice things up with a Tea Cake to go along with that perfect cup of Chai...or Tea.
Even if I don't feel like it my hubby will convince or push me to go bake a tea cake.. So I have a recipe for the Perfect Cinnamon Tea Cake! So simple, sweet, satisfying and darn good... Full of Cinnamon Spice making it the perfect cake to warm you up on a cold winter day.. I even add a couple of teaspoons of lemon juice to zing things up.. You can use any toppings of your choice, nuts, almonds, coconut, or sprinkles I even add a cinnamon glaze. So get ready for a warm, moist heavenly tea cake..

Naz's Tips:
Dip your knife into warm water or under your faucet, before you cut this or any particular cake, to prevent cake from cracking or flaking.

Make sure your oven is not too hot otherwise, you will get a cracked cake, make sure its not to cold other wise the cake will be coarse.

Make sure you have the correct measuring spoons/cups for accurate results otherwise you will have a fail recipe.

Prep time: 15 minutes
Baking time:30-35 minutes
Oven: 350 degrees
Ingredients:
3 cups all purpose flour (maida) sifted
1 cup sugar
1/4 teaspoon salt
1 tablespoon ground Cinnamon
1/4 cup brown sugar
2 tablespoons fresh lemon juice (optional)
4 teaspoons baking powder
1 1/4 cup of milk
1/2 cup of butter, margarine or cooking oil
2 eggs at room temp
2 teaspoons vanilla

Method:
  1. Grease a 13 inch Baking pan set the pan aside
  2. In a mixing bowl combine flour, sugar, baking powder, salt, and cinnamon.(making sure there are no lumps of any of the ingredients
  3. In a separate mixing bowl, Beat eggs, butter or oil, brown sugar, lemon juice,vanilla, and milk for a good 2 minutes. Pour the wet mixture into the dry mixture, mix until well combined.
  4. Pour batter into prepared pan, cook in a 350 oven for 30- 35 min or until a toothpick inserted comes out clean.( not everyones ovens are the same so please check up on the cake every 10-15 minutes so it doesn't burn or over brown)
  5. Cool cake on a wire rack, remove from pan after 15 minutes, serve warm... with your perfect cup of Tea (Chai) and coffee..
For The Cinnamon Glaze:
2 tablespoons brown sugar
1/4 cup of powdered sugar
1/2 teaspoon cinnamon
2 tablespoons butter
1/4 cup of milk
Put all the ingredients into a saucepan and cook for about 1 minute stirring. add milk lower flame and simmer for 30 seconds, and pour glaze over your cake, and top with your favorite toppings such as nuts, or sprinkles coconut etc.

Lemon Grass Green Tea for colds and flu

I picked up a cold last week, since winters in the air, and the weathers changing with so many allergies.

 I had  so many restless nights because I would be snoozing away during the day with medications for cold cough and flu... So like most of us.. Mom was to the rescue! She came over my place with a few simple ingredients and whipped up a cup of lemon grass green tea.. And believe it or not I jumped out of bed the next morning,(getting the kids ready for school, house work, laundry) I felt so relived and so comforted with the green tea.. My Mom brought over fresh lemon grass used for green tea, its a different kind of  herbal green grass with a fragrance of lemon and loads of health benefits.

 It made my lightheaded aches go away, my flu vanished about 80 percent and the cough was more than 50 percent better..  So if your fighting a cold or flu or just feeling lightheaded with the cold season, make a cup of green tea to save the day.. (Especially if you're a busy mom like me with your hands full) ..

I got the recipe from my Mom early next morning and had told her it worked wonders for me...
Before I start the recipe I want to share a couple of other benefits I've been researching about green tea.

1. Green tea and cancer: Green tea helps reduce the risk of cancer. The antioxidant in green tea is 100 times more effective than vitamin C and 24 times better than vitamin E. This helps your body at protecting cells from damage believed to be linked to cancer.
2. Green tea and heart disease:
Green tea helps prevent heart disease and stroke by lowering the level of cholesterol. Even after the heart attack it prevents cell deaths and speeds up the recovery of heart cells.
3. Green tea and Anti-aging: Green tea contains an antioxidant known as poly phenols which fight against free radicals. What this means it helps you fight against aging and promotes longevity.
4. Green tea and weight loss: Green tea helps with your body weight loss. Green tea burns fat and boosts your metabolism rate naturally. It can help you burn up to 70 calories in just one day. That translates to 7 pounds in one year

" I think I can get the hang of this"

Ingredients: servings for 2
prep time 2 minutes
cook time 5-10 minutes
stove top cooking

2 cups of water
1 cinnamon stick
1 freshly squeezed lemon
2 tablespoons of sugar or according to taste
2 teaspoons honey
2 tablespoons lemon grass or any herbal green tea

Method:
 In a small pot or vessel add 2 cups of water
sugar, cinnamon and lemon grass ( or any herbal tea).
Bring to a boil and simmer for up to 5-10 min.
Remove from flame and pour into cups using a strainer.
In your cup add 1 teaspoon of honey and 1 freshly squeezed lemon mix and stir with spoon.
Cuddle up and Enjoy....

It was so fun meeting friends getting together having lunch and of course the Qurbani was the best part.. Busy Day Snack Cake Made From Scratch Step By Step

I have always loved yellow cake. Ever since I was little I would pick the yellow, or the vanilla cake over chocolate or any other flavor.. And now its the same for my kids they will pick yellow cakes or muffins over chocolate ( not saying I don't like chocolate because I cant live without that either lol)
So anyways I'm baking my Famous Busy Day Snack Cake out of scratch today.
Its 9.00 pm and the kids are off to bed, and I'm Baking for tomorrow mornings breakfast, and so the kids can take the cake as a snack for lunch. ( I even sent some to the Principal hope he likes it)

 The reason why its called a busy cake is because its the type of cake you would make when your really busy it takes only about 10 min to get the batter ready and off to the oven! plus The Busy snack cake is so scrumptious, moist tasty and made out of just a few basic ingredients. Im sure all the moms out there can understand that you don't always want those very sugary, sweet, oily, full of egg with heavy toppings cakes, or desserts for their kids all the time. So Im telling you Mommy's These are the simplest little treats ever!

Stop paying so much at grocery stores for snacks and muffins cakes when you can bake your own Homemade, fresh and healthy sweet treats. "YOUR KIDS WILL LOVE YOU"

Naz's Notes:
1. Please be real precise with measuring the ingredients using the correct measuring utensil's.
2. Dip your knife in water, before cutting this or any particular cake, so the cake wont break or crack.
3. You can be creative, and use any toppings of your choice, like nuts, almonds, glaze, or nutella..

Ingredients makes 8-10 servings depending on how big you cut the pieces
Prep time 10 minutes
Bake Time 25 minutes
Cool 15 minutes

Ingredients:
1 1/3 cups all purpose flour
2/3 cup sugar
Sprinkles ( any choice)
2 teaspoons baking powder
2/3 cup milk
1/4 cup butter or margarine (softened)
1 egg
1 teaspoon vanilla extract

Step by Step Method:


 
Grease a 8-1 1/2 inch round baking pan, and set to aside.
 In a mixing bowl combine flour, sugar, and baking powder. put to aside
In a separate bowl combine, milk, eggs, butter, and vanilla mix well. add wet mixture to dry mixture.
 
 
Now add in your confetti sprinkles( this is optional, but my kids tend to love it) Mix well with a hand whisk, for about 2 minutes.
 
 
Pour batter into your prepared pan( I used a heart shaped pan my mom got me as a gift) and place in a 350 oven for 15-20 minutes, depending on your oven.. some ovens will take more time like 25-30 min.
 
 
after 10-12 minutes, when the cake is rising, add the sprinkles ( If you add them to the batter when its not half way done, your cake will sink, or overlap the sprinkles when rising)
Insert a toothpick, when it comes out clean remove the cake from your oven..
cool in pan for 10-15 min and serve, warm or cold.. ( what I do in a hurry I let the cake cool for 10 min on a wire rack, and them place it in the top of my freezer/refrigerator with the door open for 5-10 min and its cold in a jiffy)
 
You can top  the cake with nuts, raisins, oreos, even a glaze, or nutella its up to you, have fun and be creative.  I just do it the real simple way  because remember its my busy day cake..

Sweet & Sour Stir Fry Karahi Step by Step With Pictures


A Mouthwatering Sweet & Sour Karahi, Poured on to Fluffy, warm white Rice. So soft, with 2 different Twists of flavor.  So stop eating the same old karahis and try this new exciting stir
fry karahi you'll go crazy after..

Thin slices of beef, cooked in seasonings and spices, then fried
in a tangy sweet and sour tamarind chutney.. So mouthwatering that you'll
be craving for more later..
Here's my recipe..

Ingredients..
serves 4-6 hungry people
prep time 20 min
cook time 40 min
stove top cooking

1 1/2 to 2 pounds of lean beef, sliced very thin like steaks
2 large onions
4 large tomatoes
2 Green chili peppers
1 tablespoon of ginger garlic paste
1 teaspoon of salt
1 teaspoon crushed black pepper
1/2 teaspoon of Chinese salt
1 tablespoon of red chili pepper (optional if you like your food spicy like I do)
1/2 cup of cooking oil
bunch of spring onions, or cilantro,
1 tablespoon crushed cumin seeds zeera

For the Tamarind Imli chutney (sauce)

You can use any store brand ready made tamarind/imli
To make your own
Ingredients:
  • 2 cups - Tamarind Pulp (Soak tamarind in water and squeeze out the pulp)
  • 1/2 cup water
  • 2 tablespoons - Gud (Jaggery) or sugar (or brown sugar)
  • 1 teaspoon - Red Chili powder
  • 1 teaspoon - Cumin powder
  • 1 teaspoon - Amchur powder (dry mango powder) (optional)
  • 4-5 dates (optional)
  • 5-6 raisins (optional)
  • Salt to taste
  • Black salt (optional)

  • Step by Step Method:

    Cut Thin steak like slices of your beef or lamb, wash thoroughly



         Heat your oil in a wok, once the oil is hot pour in your beef, salt and black pepper.
    Fry in oil for 15 min checking frequently and adding water with a table spoon so the beef doesn't burn.

    Add your onions and cook for about 5-8 min 

                                     Then add tomato, green pepper, ginger garlic, and red chili pepper stir and cover  let cook for 15 min. Add half of the tamarind Chutney, and leave the other half for garnishing to pour over the Beef.    Add 2 cups of water, cover and cook for 15 min
                                    Check your beef to see if its turning soft, and tender


    Now pour in your sliced green chili peppers(optional) Cover and cook again so they can get nice and soft. Add more water if needed, to reach a thick consistency of the karahi. Once you see the gravy releasing oil remove from heat.

    Serve with piping hot white rice, First the rice, then the beef stir fry karahi, and then top with the tamarind chutney, sprinkle with fresh green peppers, or cilantro and DIG INN....

    The Moistest Banana Cake Ever!

    Hi guys Ok I'm obsessed with Banana Bread, Banana Cake, and anything that has to do with bananas in Baking.. Its that smell, while baking the cake that just rushes through the whole house, Bringing back good memories of childhood, when we would be playing in the backyard and mom would call us in the house for some good old Banana Cake..

    I have 2 loafs in the oven at this time while I'm writing this post.. for tomorrow's breakfast since its Sunday and my boys are off of School, and only if you can smell the house "Its heavenly".

    This morning I was buying bananas off the young boy who sells them on his cart daily, and I go to him give me the darkest, soft, ripest bananas you have! and he goes to me aunty are you out of your mind! And I go to him no sweety you will be out of your mind when you taste my moistest banana cake with these dark ripe bananas.. So I grabbed 2 dozens, peeled them and froze them 3 bananas in each Ziploc bag, for later.. So remember For the fullest banana flavor, select bananas that are beginning to turn Dark.

    So pull up your sleeves and start baking here's my quick and easy recipe for The Moistest Banana Cake Ever!



    Prep time 20 minutes
    Bake Time 35 minutes
    Cool time 2 Hours
    Oven 350
    Recipe Adapted from Mom
    Makes 12-16 servings
    Can be freezed up to 2 months/thaw and serve

    Naz's Notes from my experience:
     1. Please be very precise with measurement's when Baking. Make sure you have the correct utensils, like baking cups and baking spoons in order to achieve
    perfect results
    2. Check your oven temperature occasionally. If it's too hot, cakes may develop tunnels, and cracks. If its too cool, your cake may become coarse.
    3. All the ingredients should be at room temperature

    Ingredients:
    2 1/4 cups all purpose flour (maida)
    1 1/2 cups sugar
    1/2 cup of brown sugar
    1 1/2 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup mashed ripe bananas (about 3)
    3/4 cup buttermilk, or sour milk
    1/2 cup shortening, or cooking oil
    1 teaspoon vanilla
    2 eggs
    1 teaspoon cinnamon
    1/2 cup nuts or raisins(optional)
    poppy seed(optional)

    Method:
    1. Grease and lightly flour two 8-1 1/2 inch round or loaf pans.
    Or you can grease a 13-9/2 inch baking pan.
    2. In a large mixing bowl stir together flour, baking powder, baking soda, and salt Make a well in the middle and put to aside.
    3. In a separate large mixing bowl Add Sugar, brown sugar and  shortening or cooking oil, mix. Add eggs one at a time beating after each addition.
    4. Add Bananas, cinnamon, buttermilk, or sour milk, and vanilla.
    Beat with an electric mixer or by hand for 2 minutes.
    5.Add wet mixture to dry mixture, mixing as much as flour as you can at a time..
    6. You can fold in your raisins, or nuts which are optional.
    7. Pour Batter into prepared pans, sprinkle poppy seed on top.
    8. Bake in a 350 degrees oven for 30-35 minutes,on the middle rack of your oven, checking on the cake every 10-15 minutes, until a wooden toothpick comes out clean.
    9.Cool cake in pan on wire rack for 15 min. Then gently remove the cake from pan and cool on a rack for up to 2 hours.
    10. Frosting is very optional some like to eat their banana cakes plain (like I do) and some like a frosting, So frost with a desired frosting of your choice.

    Apple Cinnamon Cake

    Filled with apples, nuts, and a blend of spices, "this cake is a perennial autumn favorite"
     Its the kind of cake you want to eat when you cuddle on the couch with a cup of tea or your favorite coffee on a cold  rainy day..

    So go clean out your fruit baskets, and your pantry, get a few ingredients together for a sweet, warm and comforting Apple Cinnamon Cake.
    You'll be glad you did.

    Naz's Notes: when baking please be very precise with measurements to achieve perfect results. Make sure you have measuring cups and measuring spoons on hand
    when baking.


    Prep 30 mins
    Bake 1 hour
    Cool 2 hours
    Oven 350
    Ingredients

    3 cups all purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 tea spoon ground cinnamon
    1/4 teaspoon ground allspice
    1 cup granulated sugar
    1 cup packed brown sugar
    1 cup cooking oil
    2 beaten eggs
    1 tablespoon vanilla
    3 cups chopped, peeled apples
    1 cup chopped pecans,nuts, or almonds
    2 teaspoons finely shredded lemon peel
    Sifted powder sugar for topping(optional)

    Method:

    1. Grease and lightly flour a 10 inch tube, pan or a cake pan, set pan aside
    2. Stir together flour, baking powder, baking soda, cinnamon , all spice, and 1/4 teaspoon salt, set aside
    3. In a mixing bowl combine granulated sugar, brown sugar, oil, eggs, and vanilla. Beat with an electric mixer, or hand whisk on for 2 minutes.
    4. Add dry mixture to wet mixture, beat again until well combined.
    5. Fold in apples, nuts, and lemon peel.
    6. Pour batter into the prepared pan.
    7. Bake in 350 oven for about 1 hour or till a wooden toothpick comes out clean.
    8. Cool cake on a wire rack for 10 mins. Remove from pan, cool thoroughly on wire rack.
    9. Sprinkle with powdered sugar, cover and store in your refrigerator
    Enjoy warm or cold, with a cup of coffee, or vanilla ice cream
