Hi guys today I made the most sloppiest lasagna ever!! Not that I used sloppy ingredients or it wasn't well cooked, but what I mean is it was assembled so sloppy that it didn't even take me 2 min to put it together and in the oven! But it was also the best Lasagna I have tasted in my entire life.

Yellow Muffins with Nutella Topping


These Muffins are so soft, light, sweet, and are super easy to bake..
I make these sweet treats about once a week to surprise my little ones when they come home from school...
You just need the right ingredients,
The correct baking utensils and you'll have a kitchen full of sweet warm aroma...
and very happy kids coming from school to munch on the Muffins..
I usually just add vanilla, but if you would like a lemony flavor add 1 tablespoon of lemon juice and 1/2 teaspoon of lemon peel
Or for Orange flavor add 1 tablespoon of fresh orange juice and 1/2 teaspoon of orange peel.


Makes 10-12 muffins
Prep time:10 minutes
Bake time:20 minutes
Oven 350
Ingredients:
1 3/4 cups all purpose flour(maida)
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
3/4 cup milk
1/4 cup cooking oil
1 teaspoon vanilla

 Cooks Note
1. you can split the batter in half and add 1/4 cup of cocoa powder to half of the batter, and you will have chocolate muffins.
2. make sure you don't over fill your muffin cups more than half way or 2/3 otherwise your muffins will explode over the muffin pans.
3. Preheat your oven only 10-15 min before. Make sure its not too hot other wise you will end up with cracked muffins.
4. These Muffins Cook really fast so check up on them every 10 min.

Method:
Grease Twelve 2-1/2 inch muffin cups or line with paper bake cups, set aside
In a medium mixing bowl combine flour, sugar, baking powder, and salt.
Make a well in center of dry mixture, set aside.
In another mixing bowl combine egg, milk, oil, and vanilla mix with a electric whisk or hand whisk for about 2 min
add egg mixture all at once to dry  mixture.
Stir just till moistened(batter should be lumpy)
Spoon Batter into prepared muffin cups
Filling each 2/3 full
Bake in a 350 degrees oven for 20 minutes until golden yellow brown,
Or when a inserted toothpick comes out clean
Cool muffins in pan for 10 min
Remove gently from pan and place on a wire rack to cool for up to 30 min




I used Nutella topping for the top of the muffins, but you can use any flavor or topping of your choice..I usually make my own but my son insisted on Nutella
"Don't have topping" Then make some homemade No-cook chocolate Fudge frosting like i do.

3 cups sifted powder sugar
1/2 cup unsweetened cocoa powder
1/2 cup butter or margarine softened
1/3 cup boiling water
1 teaspoon vanilla

Method:Frosts 18-20 muffins
Combine sugar and cocoa powder
Add butter,boiling water, and vanilla.
Beat with a electric mixer on low speed till combined.
Then again beat on medium speed for 2 min.
 Cool for about 20 min, or until mixture reaches spreading consistency.
and enjoy...with your favorite, muffins, cupcakes, and desserts.

Chicken Tikka Noodle Pot Pie

Hi guys hope everybody had  a great weekend!
I had a great time! My kids were off School, and we just layed back relaxed and watched some old family videos.. That brought back so many good memories..

For lunch I had some leftover Chicken Tikka Noodle/Pasta( That was So good)  I cooked on Friday laying in the refrigerator so I thought of doing something different with the noodles.

I put my taste buds together and made Chicken Tikka Noodle Pot Pie.
I used the leftovers, Made some Homemade Garlic White Sauce,(a creamy homemade seasoned sauce) and made the Crust to go on the top and bottom of the Pot Pie.
and Belive me it was mind blowing... I made koolaid for the kids and enjoyed a Fizzy drink myself..
So if you want to try something New and Different with a Zing of  flavors? Then you should definently give this a try..

Prep time: if you have The tikka noodles made a head of time (leftovers) 20 min
Cook time 25-30 min
Oven 350

Ingredients: For 1 large Casserole pan serves 6-8
Leftovers
1 cup soy sauce
1 cup cheddar cheese(any brand)

For the White Sauce
2 tablespoons butter or Olive oil
1 cup Milk
1 cup water
3 cloves garlic
1 teaspoon salt
1 teaspoon black pepper

For the Crust
2 cups all purpose flour
1 teaspoon salt
4 tablespoons cooking oil
1 cup of warm water
1 tablespoon baking powder


Method: First we will prepare the white sauce( In a small saucepan over medium heat, melt butter. add the garlic and stir until its golden brown, Then Add flour and stir until the butter and flour are well combined. Pour in milk, and water together stirring constantly as it thickens. Add more milk depending on desired consistency. Remove from heat. (The Sauce should not be too Thick because you will end up having a very dry pot pie)

Now prepare the dough for your crust ( The dough should be soft, and warm you can use the dough for the crust right away.
In a large mixing bowl add flour, salt, and baking powder mix together. Now add the oil and crumble the dough with your hand, then start adding warm water little at a time, you may not need all the water the dough should not be too sticky add a pinch of flour if you have too.
Place the dough on a clean surface make two round balls and start rolling out the crust as long as you can to fit your Casserole Pan.

Assemble your pot pie


Use a non-stick spray or grease your pan with oil, Now lay out your bottom crust, and add your
Chicken Tikka noodles Then pour your white sauce covering all the noodles
Then pour the soy sauce all over the pot pie (you can also sprinkle 1 cup of your desired cheese on top.
Now add your top layer of the
crust, using a fork or table knife make a couple of holes on top for the air.
Place in a preheated oven for about 30 min. Checking every 10-15 min.
You can brush the top with milk or oil.
Remove from heat let cool for 10 min and cut into desired pieces.

You can use leftover Sauce for a Gravy like topping of the Pot Pie.

Chicken Tikka Noodles To Die For



These Noodles are totally to die for! A Unique blend of Oriental and Asian flavours makes this The yummiest Chicken Noodle dish ever. I came up with the recipe my self a couple of years ago.
and I make this dish about every once a week or so. But my family cant get enough of it everytime. You can even use the Leftovers for Great dinner Casseroles.

So Give it a try! Im sure you will have some very happy faces on the dinner table today..


Servings for 4-6
prep time 15 min
cook time 30 min
Ingredients:

1 lb Macaroni any brand ( I used spiral Macaroni)
1 lb chicken breast(cut into cubes)
3 tablespoons cooking oil
1 medium onion sliced
2 medium tomatoes sliced
2 green chilis( you can use less if you dont want your noodles so spicy)
1 teaspoon turmeric
1 tablespoon ginger garlic paste
1 teaspoon salt(according to taste or your diet)
1 tablespoon tikka masala (optional)
1 tsp crushed cumin zeera
1 tsp chinese salt
1/4 cup soy sauce
1 cup long green beans( cut in half)
1 cup capsicum pepper, sweet pepper or bell pepper Sliced(optional)
1 tablespoon olive oil for noodles
1/2 cup water

Cooks Note: You need to make sure your macaroni noodles don't get too soft or mushy otherwise it wont have the same taste or flavors.

Method:
Boil 1 pound of your choice of noodles as according per package with salt.
strain, wash and mix with 1 tablespoon of olive oil so they dont stick
 In a wok or large pan add your oil then onion, fry onion stirring occasionaly until they turn a very light yellow color
Add in your chicken and fry in the onion and oil for about 5 min Now add in all the ingredients at once except for the soy sauce
Stir cover and cook on medium flame for 15 min.
Now add in your soy sauce, cook for another 5 min, and add your 1/2 cup water. Cover and cook again for 5 more min
 Once the chicken turns into a nice thick gravy remove from heat
Add the noodle to your large wok or pan with the chicken tikka mix.
 Put on dum (cover with Tight lid) for 6-8 min and you have Mouthwatering Chicken Tikka Noodles in no time.
Serve Hot with french bread, or dinner rolls

Perfect Fall Banana Bread

 

Hi Everyone Falls Here! With Halloween just around the corner.
and the weather so beautiful and breezy, even though we are going to miss summer:(
 
So you know what that means MORE BAKING!!
for me. I like to do my Baking in the morning's Since I am a early bird. When I send the kids of too school, and get done with the chores around the house, I roll up my sleeves and get to work..
Today I made loads of Banana Nut, and Banana Bread..
The recipe is so easy, and like I said in one of my post before, this recipe was also taught to me by a very good friend and neighbor Kay..
 
In order to achieve perfect results you do need to have measuring spoons and measuring cups.

For The Fullest Banana Flavor, Select Bananas that are beginning to turn dark.
You'll have a house full of warm, moist delicious Aroma..
and Banana Nut bread in just minutes..
I know you can just go to the store and by any typical bread, but its that special feeling you have inside, when you bake it yourself  and knowing that its homemade all the ingredients are fresh, and up to date.
So lets get started
 
Prep time 15 minutes
Bake time 30-45 min
Oven 350
Makes 1 loaf 16 servings
Ingredients
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 egg
1 cup mashed bananas ( 3 medium)
3/4 cups sugar
1/8 teaspoon salt
1/4 cup cooking oil
1 teaspoon finely shredded lemon peel (optional)
1/2 cup chopped walnuts, almonds, or pecans
 
Method
1. Grease the bottom and 1/2 inch up the sides of a 8-10 inch loaf pan and set aside.
2. In a medium mixing bowl combine the flour, baking powder, baking soda, cinnamon, and 1/8 teaspoon salt. Make a well in the center of dry mixture, and set aside.
3. In another mixing bowl combine the egg, bananas, sugar, cooking oil, and lemon peel. mix for about 2 minutes.
4. Add egg mixture all at once to dry mixture
5. fold in your nuts, stir just till moistened (batter should be lumpy)
spoon batter into prepared pan.
Bake in a 350 oven for 30- 45 min, or until you insert a toothpick in the center and it comes out clean.
6. Cool in pan on a wire rack for 15 min.
slowly, and gently loosen ends of cake and remove loaf from pan.
Cool up to 1 hour before slicing for best results.

 
For Plain Banana bread, simply Omit the nuts from the recipe.

 
Serve with hot tea or coffee, or your favorite Vanilla Ice cream
What I do is make 3-4 loafs and put them in Ziploc air free containers and have them ready on hand for my family, and guest get togethers!!

No Fail Homemade Doughnuts

A couple of days ago my little sister begged me to make some doughnut's. She said she got the recipe off a friends share on fbook, so she wrote down the recipe step by step and totally insisted me to make the doughnut's

That day I was so lazy dragging my self to the kitchen but Believe it or not, they turned out so Utterly Delicious That I have named the post a No Fail recipe..
The Doughnuts are so soft from Inside out, their yeast raised, with just the right amount of all the ingredients.

Definitely worth a try if you have a sweet tooth or if  you're a doughnut lover.

Topped with your favorite frosting's, nuts and sprinkles. I used a vanilla sugar cream glaze, for half of the doughnuts, and used nutella for the other half.

I even Coated the doughnut holes with frosting and sprinkles, and inserted a toothpick, and they were the yummiest doughnut holes in the world. Try them for your self to believe this No Fail recipe.

Ingredients: Makes 10-12 large doughnuts
prep time 1-2 hours
cook time 10-15 min

2 1/2 cups all purpose flour (maida)
3/4 cup warm milk
2 1/2 teaspoons yeast
3 tbsp. warm water
2 1/2 tablespoon cooking oil or melted butter
1/2 teaspoon salt
1/4 cup sugar
1 teaspoon vanilla essence
1 beaten egg
1 teaspoon cinnamon optional
Step by Step Method

 
All the ingredients you will need
 
In a small bowl mix yeast and warm water cover and let yeast get active for about 10 min.
In a large Mixing bowl, combine, salt, sugar and flour mix with your hand or a whisk, and pour in your yeast. Mix for about a minute, then add in your oil, egg, and vanilla adding in warm milk, little by little.
Remember not too get the dough too soft, if it gets sticky just sprinkle it with some all purpose flour.
 
Knead the doug
h for about 5- 8 min so when it's done it should look like the dough in the pic above.
Patt the dough with some oil, and cover with a cloth or saran wrap, and place in a warm area for up to 1 hour
 
 

After 1 hour the dough should have raised double its size.
Start kneading the dough once again punching out all the air.
On a clean surface roll out your dough. With a cookie cutter or just a plain water glass cut out your doughnuts ( the dough should be 1/2 a inch thick)
Let the doughnuts sit on a floured tray for another 20 min, so they can rise to double its size.
In a large frying pan heat your oil, make sure its not to hot, or to cold throw in a doughnut hole if that comes up to the top of the oil, then your oil is ready to fry. Fry for about 30 seconds on each side
Let your doughnuts cool for about 20 min before you start the frosting.
.
Pour your toppings or your glaze in a plate and dip your doughnut gently pressing down and then remove.
You can even be creative with leftover doughnut holes, like mines.
Just roll them in your favorite glaze, and top with your favorite sprinkles. Your kids will have a ball over these.
My little one sure did!!

Cheese Sandwich Made from Leftover Pizza Dough In a Sandwich Maker

A light fulfilling sandwich great for lunch, Kids, or a Snack.
Made from leftover pizza dough. Stuffed with your favorite Sauce, Cheese, or veggies.
There are so many wonders you can do with a simple sandwich maker! So buy one for your kids today!


prep time 10 min
cook time 10 min
Needed: A sandwich maker

Ingredients:
Left over pizza dough
Mozarella cheese
Pizza sauce
veggies(optional)
Oil or cooking spray to grease your sandwich maker

Roll out a 2-3 inch ball of  leftover Pizza Dough

Keep rolling until you get about a 10 inch long tortilla( Tortilla should be very thin if you have used yeast in your pizza dough, Because it is going to rise

With a pizza cutter, cut it in half then cut it into squares, like a piece of bread

Grease your sandwich maker Top, and bottom with oil, or cooking spray

now put the pieces of dough  in your sandwich maker, and top with sauce and cheese. and cook for about 10 min

Remove from Sandwich maker, and let cool in a plate before cutting

Serve with your favorite ketchup, ranch and salads

Home Made Butter Horns


Butter horns are so soft warm, chewy, and satisfying.  Their great as a side dish, with your favorite, pastas, salads, and main meal dishes..
I make these delicious Butter Horns about 2 times a week. This time I baked mines with homemade Spaghetti but I usually like them with Chicken Fry  Mashed Potatoes and Gravy.
they turn out so fresh, warm and yummy every time I bake them. The  reason why their called Butter Horns are because their so buttery, and shaped like horns!


Its this special feeling you get when you know their Home Made, instead of going out and buying the frozen, buns, or biscuits you have to thaw and bake. So I  would love to share my recipe for homemade Butter Horns with all of you

Prep time 15 min rising of the dough 30-45 min
Bake time 15 min
Ingredients: makes 8-10 butter horns
2 cups of all purpose flour (maida)
1 tsp salt
3 tbs active yeast
1/4 cup of warm butter
1 cup of warm milk

For the inside of the butter horns (optional)
2 tbs warm butter
2 tbs milk
1/2 tsp of garlic salt


Method:
 
1. In a large Mixing Bowl Sift together flour, salt, and yeast.
Then add in the butter, Now add in your warm milk milk little by little mixing with your mixer or your hand,( if you think you need more milk than add more 1 tbs at a time)  knead the dough the way you would make pizza dough.
Then Cover with a damp cloth and put in a warm place for about 30-45 min
( I usually place the dough to rise in my oven "When its turned off of course"
 
2. Once your dough has set and raised, knead it again several times, Punching the air out of the flour.
 
3. Roll our your dough like you would making a pizza crust, now using a sharp knife or a pizza cutter, cut the dough like a pizza making triangles about 2-3 inch wide. you should end up with 8- 10  Pizza shape Butter Horns.
 
4. grease, and flour a pizza pan or cookie sheet.
 
5. Now in a separate bowl add 2 tbs of melted butter, 1 tsp garlic seasoning and 2 tbs milk Mix it up to get a mixture. Leave half of the mixture for later
brush it on the slices of the butter horns, and start rolling them up starting from the Top then rolling down ( see image below)


 
 
 
 
6. Once you have prepared the Butter Horns place them on your cookie sheet and let them sit for about 20 min. Until they get twice their size. In the mean time preheat your oven to 325

7. bake for about 15 min until they get nice and fluffy, make sure they don't burn, when their almost done brush them with the second portion of the butter mixture, and place them under your broiler for about 3- 5 min.( This is optional )
 
 


Serve Warm, and Hot with your favorite Pizza's Pastas Lunch or dinner I'm sure your family will love them.
