Mini Jello Fiesta Cocktails

These Mini Jello Fiesta's are to die for. They are so cute, yet so tasty healthy and satisfying.
I remember eating them in Elementary school and the Teachers would say "eat your fruit's and Jelly its good For you."

So I made these for my boys last weekend and couldn't wait to post the recipe for all of my wonderful, friends and viewers.

The Cocktails are made out of  2 different flavors of jelly, and your favorite fruit. You can use fresh fruit laying around in your refrigerator, or you can use a can of  Fresh Fruit Cocktail. Then their  prepared in plastic Mini disposable cups.

It's a good way to make your kids eat that healthy fruit, since jelly is almost flavorless..
You can even top the cocktail's with whipping cream, nuts and almonds, but I didn't because I thought It would get too sweet for the kids.
So here is my simple step by step  recipe for Mini Jello Fiesta Cocktails.

Prep time 30  min
assembling 10-15 min
Refrigerate 30-45 min
Ingredients: makes 8 disposable mini cups of cocktail

2 packets of Jello / lime flavor and cherry flavor/ or any of your choice
3 cups of  fruit cocktail or fresh fruit of your choice diced
8 disposable mini cups
whipping cream/cool whip optional

Notes: 1.Make sure you refrigerate the Cocktails up to the given time provided or you will have a very watery cocktail.
2.  When done Keep in the freezer section of your refrigerator if your planning on serving them after dinner, so they wont start to get soft, or watery.

Make your jello according to your package, while its still room temp pour it in your mini cups 1/3 of the cup full. let stand for about 5 min.
Now pour in 2 tbs of  your fresh fruit, or your fruit cocktail, let that sit for 5 min.

Now pour the Cherry jelly on top, and refrigerate after 10 min. for up to 30-45 min.

After Refrigerating the mini cocktails for up to 30-45 min, Using a thin sharp fruit knife Very gently loosen the side of the cups and squeeze out the cocktails on to your garnishing plate or bowls.

 Or gently just squeeze the bottom of the cup's and they will come right out.

Have fun garnishing your Mini Cocktails, with whip cream or cool whip, and some chopped nuts, or almonds. Or Enjoy with some fresh fruit or cocktail.

The Moistest Carrot Cake Squares you Can ever Have

If you have a sweet tooth and  love to have something sweet with your afternoon Tea or Coffee like I do. Then this Carrot Cake is for you!

Since Fall Is just around the corner I'm always in the mood to bake something Sweet, Everyday because the Weather's becoming so much cooler, and that breeze just feels Lovely.
So I made my very famous Carrot Cake. The recipe was taught to me by a very Good Neighbor friend, named Kay. She was a great cook, and is no longer with us in this world May god bless her Soul.

I have 3 picky Boy's and a very picky Husband, and they absolutely loved the Cake So Today I'm going to share my simple version of a very delicious Moist Carrot Cake, That I hope all of you enjoy!

1. Use a fine shredding surface to get very thin strips of carrots for this moist classic cake.

2. Adding nuts, or almonds to this carrot cake is optional, and the middle of the cake might seem to be more softer than the rest of the cake when your almost done so, put it under the broiler for just about 3-5 min.

3. you can add frosting of your choice to the cake, leave it simple, or sprinkle it with nuts or
powdered sugar

4. you can use a round pan for around cakes, or square pan for Square cakes

Ingredients: makes 12-16 servings
prep time 20 min
bake time 30 min
cooling time 1 hour

2 cups all purpose flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups finely shredded carrots
1 cup cooking oil
4 eggs
1/2 cup nuts, and almonds optional

Method: Very Easy

Grease and lightly flour two 9-1 1/2 inch round or square baking pans.
 In a large mixing bowl combine flour, baking powder, baking soda and cinnamon, make a whole with your hand in the middle and place to aside.
In another large bowl mix your eggs, sugar, oil and shredded carrots.
Mix for about 2 minutes with a mixer, or by hand.
Pour mixture into dry mixture, and mix for about 1-2 minutes.
Pour batter into prepared pans.
sprinkle with almonds and nuts (optional)
Bake in a oven for 30 to 35 min or until a wooden toothpick comes out clean.
Cool cake on a wired rack
Cool thoroughly before cutting cake,  sprinkle with powdered sugar, Cover and store in refrigerator will be fresh for up to 2 weeks.

My Youtube Attempt


Hello Dear Friends, and Viewer's. I hope you guys are all having a Spectacular Mid Week Wednesday.
Were in the Middle of August with the New year of School Coming in.
 I know Kids are so excited Starting the new year, with their new teachers, new class room, and friends. But I think no one is as happy as We parents are! am I right? I think  we had enough of  2 wonderful, loud, noisy months of Vacation.

So you all know what that means Free Time or should i say more time For the Grown ups! Hooray I am so excited because this will give me more time to be in my kitchen. So I can cook more yummy, exciting recipes for my family, and share them with all my wonderful viewers, and  friends.

I have some wonderful recipes coming up to share with all of you.. with Fall coming in just next month, I have some delicious baking recipes coming up.. That means lots of cinnamon apples, and pumpkin pies.

I have also been told by many friends, neighbors, family and some private msgs saying I should make some Youtube Videos.  So I did make a account a couple months ago, and I put up a few slide show videos just to see if it works alright. So check it out and let me know what you guys think..
Hopefully I will have a few videos every week to share with all of you..

Home Made Potato Crisps

Are u sick of eating the same old potato chips, or crisps? Well  make your own...
I do, and there really good. You just need a few simple ingredients you can use eat them with ketchup, put them in your favorite burgers, sandwiches, or serve them to your kids for lunch or as a snack.

This recipe is for fried potato crisps, but you can bake them as well.

Ingredients servings for4
prep time 10 min
cook time 10 min

4 large potatoes
salt, according to taste
oil for frying
pinch of black pepper
seasoning, garlic, onion( optional
ice cold water

Slice your potatoes really thin, with a potato slicer, or by hand. Then give them a Shock in Ice cold water for about 10 min. remove and strain
Now add oil, a pinch of salt according to your taste buds, pepper, and seasoning mix like garlic, onion etc.
and fry on med-high flame for about 2-3 min on each side.
If you are going to use them in a sandwich or burger and don't want them too crispy then take the crisps out fast other wise for crunchier crisps leave in oil for a bit longer.
Note.. Keep stirring, moving the chips around in the oil, because they do become brown really quick.

Chicken Tikka Burger with Potato Crisps

Hi, Today I would like to share one of my favorite very own recipe for Chicken Tikka Burgers.
On the weekend when I get together with my sisters we make theses yummy burgers and believe me they taste Delicious. I marinate the Chicken Tikkas usually 2 3 hours before I know I'm going to be cooking them. Then  I assemble them in Hamburger buns, Bread buns, with lettuce, tomato, Cheese, and homemade Potato Chips. Don't forget I also use my Famous Ramadan Dip/Spread.
 I let the buns broil get warm in the oven before I assemble them, that way their nice and crispy soft.
So here is the quick recipe... Did I forget to add you can top the Chicken Tikka burgers with Jalapeno peppers for that extra exotic Zing..

So stop eating the same old Cheese burgers, or Chicken Pattie burgers, and try something new tonight
                                                    Chicken Tikka Burger
Ingredients for 4 burgers
prep time 10 min
cook time 15 min

1 pound Chicken Breast washed cut into thin strips
half cup yogurt
1 squeezed lemon
1 tbs ginger garlic paste
1 tsp salt ( or according to taste)
1 tsp red chili powder
1 tbs Tandoori Masala ( If you don't have the tandoori masala, you can double the chili powder, and use a drop of orange food coloring)
2 tbs oil ( or you can use cooking spray to stay on the healthy side)
4 hamburger buns

In a bowl put your chicken, salt, pepper, Tikka, Tandoori Masala, ginger garlic paste and lemon. Cover and put in the refrigerator for about 2 hours.
In a Non Stick pan add the chicken marinate to your oil don't get worried if they start to shrink, because this dose happen when you put them in the warm oil. Cook on both sides for about 5-6 min each. Keep covered with a lid. Once you see the Chicken Tikka is cooked remove from flame.
and put the pieces on a paper towel to absorb access oil.
Place your buns in a pan and put them in a your oven under broil on medium flame for 5 min
Now assemble the burger the way you like it. You can use more chicken then I did. I put a slice of cheese, tomato, and some of my homemade potato crisps, with my famous spread

You can reheat them again if you like, just pop them in the oven for a few minutes. You can also use pickles, jalapenos olives anything you wish

Chicken Biryani Naz Fiesta Style

Chicken Biryani

Chicken Biryani Is among one of the most loved Rice Dishes in our family. We can have this spicy, fulfilling  dish 2 or even 3 times a week, because it's so good and tasty. Boiled steamed rice, layered with aromatic Chicken curry potatoes and spices. Then put on Dum (low fire) to give it that perfection...

Ingredients: serving for 6-8
prep time 20 min
cook time 35-40 min

2 pounds whole cut washed chicken, chicken breast
2 medium size onions
4 medium tomatoes
4 tbsp oil
3 green chili's
1 table spoon ginger garlic paste
2 cups yogurt
4 potatoes
half can of tomato sauce/puree 4 tbs
1 tsp salt (according to taste)
1 box of Biryani masala(shan national etc)
 cups of water
(If you don't have Biryani Masala Make your own like I do)
 1 tbs  zeera Crushed cumin
pinch of saffron
1 tsp red chilli powder/chilli flakes
6 pieces of black pepper
3 cloves of cardamon
juice of 2 lemons
1 bay leaf
For the Rice
Wash and soak 4 cups of rice let soak for up to 30 min
put about 10 cups of water in a pot. Add a couple seeds of cumin, 1 tsp oil, and salt according to taste. Once it comes to a boil add rice cook until rice is half way done, strain  and pour in a large pan, very large bowl,( you don't want the rice to get mushy if there in a small bowl or pan once strained)
For the biryani curry:
In  your wok or pan add oil, then add onion fry until it becomes golden brown. get 1 portion of the onion, and place on a paper towel to absorb access oil ( this will be for the garnishing on  the Biryani)
now add tomato, peppers, chicken, potato, your biryani masala,  salt, ginger garlic and lemon juice.
Stir cover and cook for about 10-15 min.
( keep adding a Tbs of water so  the curry dose not stick or burn)
Once you see the curry's getting nice and red add the yogurt, stir  cover and cook for another 5-6 min. now add 2 cups of water cover and let the curry cook lower the flame after 5-6 min, once you see the gravy is a nice thick consistency (not too thick) shut of your heat, and remove immediately.
Now the fun part layering
 For this particular biryani I put a layer of the Curry first about 2 inch thick, then a layer of rice, then another layer of curry, now more rice, then garnish with your favorite, fried onion, tomatoes, chili peppers, and cilantro ( you can add a little bit of food coloring to it) Then cover and put on dum on a very very low heat for about 15 min. once you see steam releasing from the biryani YOUR ALL DONE! So enjoy.... with your family, and loved ones.

Homemade Lemon Glazed Syrup

Want to make a yummy glaze for your sweet's and dessert's?
 well I have a great one for you!
With just 4 simple ingredients you'll have a Perfect Glaze syrup in no time.
Prep time: 5 min
cook time: 5 min
1 cup milk
1 tsp lemon fresh lemon juice
1 tsp butter
2 tbs confectionary sugar
(or you can use regular sugar)
In a pot or pan add all the ingredients and cook, simmer for 10 min until it gets nice and thick remove from flame immediately.
Cool and use for your favorite pastry, and doughnuts like I did

Eggless Chocolate Filled Braided Pastry

Happy Independence Day! To All my Pakistani Viewers around the Globe.
It was a Rainy, Chili day outside and My Husband's Friends were going to come over by noon. So I thought of making some Delicious Pastry's for My guest to serve with Tea Today. I know everyone loves Chocolate,  Tea and Pastry's.
So I put them all together and made my special Recipe for Chocolate Filled Braided Pastry.
This Is a very simple and easy Recipe. For all you Newly Wed's or New Cook's that would like to Impress your Guest or Family! This Recipe is for you. My guest's jaws were like falling to their feet, they were just amazed at how I made them.
The Braided Pastry Consists of a few Ingredients.
Its Baked and then Topped of with my Super lemon glaze ( which is optional)
and The best thing about it is Its egg less for all you vegetarians.
Ingredients Servings for 4-6
Prep time 15 min
cook time 20-25 min
2 cups all purpose flour (Maida)
1 tbs yeast
1/2 tsp baking powder
pinch of salt
4 tbs sugar
2 tbs oil
Chocolate Spread or Nutella
1 cup of warm milk or water( I used milk but water works just fine)
Here is The Step by Step Method
In a bowl add your flour, yeast, baking powder, salt, oil, and sugar Mix with your hands before adding water, little by little until you make a nice rough dough. Cover and put in a nice warm place for about 30 min.
After 30 min, knead the dough with about 2-3 punches not too much
The Dough Should look like this. Make a nice round ball shape and flatten with a rolling pin
to make a nice round Shape kind of like a Chappati, or Tortilla
Once your done rolling out the flour, get a pizza cutter or a sharp knife and cut the dough into 2 inch strips. Then Spread The Chocolate Spread over the middle.
Now getting one strip at a time, start closing the ends with your fingertips gently.
Then Start at the top and start Braiding the Three chocolate filled strips, Just like you would braid your hair, or your daughters hair.
Preheat your oven to 325 and bake for about 15-20 min Until you see the pastry has Raised, and is nice and light brown on the bottom
And There you go Folk's Delicious Chocolate filled Pastry, with a kitchen and a house full of that yummy baked aroma.. Um Um Um!
I used a lot of chocolate on the big pastry, and just a little spread on the little baby one.
Isn't it so cute..

Fiesta Chaat Pataa Corn

Tired of The Same Old Fashioned Corn? Try Some Chaat Pataa Corn!!

Today I would like to share a recipe called Fiesta Chaat Paata Corn.
This Recipe brings back a lot of memories. When me and my siblings were young, we would go to the Flea Market with my Dad, and buy them every weekend. We would wait all week to go buy the yummy corn.

The Recipe is For Boiled Corn on the cob, or smaller pieces, brushed with Mayonnaise, and them topped with your favorite Chaat Masala (its a masala, or spice mix, used in Indian cuisine. It typically consists of amchoor, and other spices.

The Chaat Pataa Corn  Is So Tangy, and spicy yet so Satisfying and Fulfilling as a great appetizer or snack...
Make some for your next get together or Barbeque's  Believe me it will be something different.

Prep time 5 min
Cook time 30-35 min. Depending on your corn

10 Pieces of fresh corn- or 1 2lb bag Packaged  boiled corn in the freezer section at your local grocery store.

1 tsp salt
1 tbs butter
Chaat Masala
1/2 cup Mayonaise ( or according to your taste)
2-3 Lemons (or according to your taste)

Add salt, butter, and water to a big pot and boil corn according to your package, remove from heat  once you see corn is nice and tender
Cool your corn, Strain so there is no access water
Now brush with Mayonaise
Sprinkle with Chaat Masala
Squeeze with some Lemon and Enjoy..

Butter Chicken With Mint Chutney and Naan

Assalam-u-Alaikum, Hello

Hope All my lovely Muslim readers, and followers had a lovely prosperous Eid with their loved ones.

For The viewers that don't know what the Holiday Means Its a Muslim Festival, Like a feast Marking the end of Ramadan, were we fast for 30 days on the 9th month of the Lunar Calendar. We Pray a big Special Prayer on Eid, Cook Our Best appetizers, sweets, and Main Meal Dishes.  Then we  have fun with friends and family the rest of the day.

 I had a great time on EID, and cooked some yummy food. I would like to share one of the special Main Meal Dish I cooked, It's Called Butter Chicken also called (Chicken Makhni)  A delicious authentic spicy Chicken Curry full of aromatic, Seasonings, and Spices. I served my butter Chicken with Mint Chutney, and White Naan.

All my guests were licking their fingers because they loved it. We had no leftovers.. So here is my Easy Recipe for Butter Chicken. ( don't get put of by the list of ingredients, its very simple, and made in no time)

Ingredients: serves 8-10 a big family
prep time 15-20 min
cook time 30 min

1/2 cup yogurt
2 pounds whole chicken, cut into pieces, or chicken breast cut into cubes
2 tbs lemon juice
1 tsp turmeric
2 tsp garam masala
1 tsp chili powder
1 tsp chili powder
2 tsp grated fresh ginger
2-4 cloves of garlic crushed
1/2 cup of unsalted butter
1 onion finely chopped ( I usually use a food processor)
1 tsp ground cardamon
1 cinnamon stick
1 Indian bay leaf
2 tsp sweet paprika
2 small cans or 425 gram can tomato sauce, or canned puree
1 cup or 250 mg thick cream
1 tbs oil

Combine yogurt, lemon juice, turmeric, garam masala, chilli, cumin, ginger and garlic in a bowl. Add chicken and stir well. Cover and refrigerate overnight.

Heat the butter and oil in a pan over medium heat. Add the onion, cardamom, cinnamon and bay leaf and cook for 2 minutes until the onion starts to soften. Reduce heat to low, then add chicken and marinade, paprika, tomato puree, Simmer for 15 minutes. Stir in cream and cook for a further 10 minutes.
and Enjoy!

I like to Garnish with chili peppers sliced like jalapeno

Notes: The butter chicken tastes best when its marinated over night, so when you know that's  going to be a main dish in your family gatherings, then marinate it the night before.
Use a good thick cream, you can add more if you want the curry more thicker.
