Quick Fix Kabob Burgers For The Kids

     Quick Fix Chicken Kabob, Cucumber, and Mayo Burger

 
Today I wanted to Fix a quick lunch for my kids, I wanted The lunch to be Hardy, yet Healthy. So I cooked up my recipe  for a Chicken kabob burger, added a few slices of cucumbers, so it could be nice and cooling, with a dash of Mayonnaise.(my kids don't like the raw onions or tomatoes) 
I  used my food processor to make the kabobs, Just add everything to the processor, mix for about 5 min, and cook the patties.
My kids were crazy after the burgers, you can make the kabobs, and freeze them in a Air Tight Container, like I do so when you don't have nothing for lunch, and you want a quick fix for your kids,  just pop open your refrigerate, defrost the kabobs for about 15 min, and shallow fry.
 
You only need a few simple Ingredients:
servings for 4-6
 
 4 burger buns, or 8 slices of bread
ketchup
mayonnaise
1 cucumber/ sliced thin
1 chicken breast/ washed cut into cubes,( so you can put it in the food processor)
pinch of salt or (according to taste)
pinch of black pepper
1 onion/diced very small
1 tsp crushed coriander
1 tsp ginger garlic paste
1 egg
1/4 cup of bread crumbs
slice of cheese (optional)
oil for frying
 
Method:
Put everything in to the food Processor chicken, onion, salt, pepper, coriander, garlic paste, bread crumbs, and egg  Mix for about 5 min, until you see all the ingredients finely chopped.
Pour into a bowl and mix again with your hands for a couple of mins.
Now heat your non-stick pan with oil, you can deep fry or shallow fry the kabobs with less oil to stay on the healthy side.
Fry for about 1 min. on each side until the kabobs look nice and golden brown.
Place on a paper towel to absorb access oil.
Now make the burgers, spread mayonnaise on each side of the burger bun, you can also use ketchup or mayonnaise.
Place the kabob on the bun, (bread)
Then layer with refreshing cucumbers.
Cut in half or serve whole for your kids, with fries, and their favorite fruit juice.

Home Made Naan Roti Step by Step Recipe

Today I would like to share my recipe of Naan. This is a soft tortilla bread, made out of flour, yeast, salt, kneaded well with milk, or water. Giving you Chewy, soft yummy Naan.
In Asia, Pakistan, India, etc Naan are prepared in a clay oven. But in the middle east, and all over the world today, you can make them in a ordinary oven, or a pan (Tava)

 Naan are usually served, with Currys, Kabobs, or your favorite Tikka's, and chutneys.

In my home Naan are cooked almost everyday. I like to spread a little bit of butter on them for my kids, and they love them They could eat naan everyday. Because there so soft and utterly delicious. While my husband and I enjoy them with currys, and soups. Here is my special recipe for naan.
Makes 6-8 Naan
Ingredients
3 cups all purpose flour (maida)
2 tsp yeast
1 tsp salt
1 tbs olive oil
1 cup warm milk for kneading the dough
(you may not need all the milk, use according to the softness of the dough)

Method:
Add sifted flour to a big bowl.
In a separate bowl get 1/2 cup of warm milk, and dissolve yeast, and salt mix for about 1-2 minutes.
Now pour slowly, and gradually to the flour little at a time in order to make the dough.
Knead the dough with your fists for about 5 min.
Cover with damp cloth, and put In a warm area for about 1 hour.
After about 1 hour, your naan, flour should have raised double the size it was before.
Get the 1 tbs olive oil and pour over the flour kneading again with your fists.
Now your Flour for the naan, should be perfect
Start to make the naan, (You will need a pin and a roller)


Heat your oven, or your Pan ( Tava)
Take the Naan Flour, and make 3 inch balls,
Roll out to about 8" Inches wide.

and place on your Pan (tava) cook on both sides for about 1 minute on each side.
Cover in a soft, cloth or a hotpot to keep
                                                               them nice and warm.
(IF you are using a OVEN, Heat your oven to broil on  250" temp.  Place naan on your Tava pan, and cook on one side, the bottom side, then get the naan, using a spatula place it In the oven so with the heat of your oven on broil it will cook the top of the naan, So its nice and double its size. remove immediately after about 30 seconds)

Angel Hair spagetti with home made sauce, sauted onion's and lean ground beef:

This is one of my very special dish's which I make at least once a month its so good, healthy and satisfying. As you know from many of my other post I make a lot of my sauce's foods etc from scratch. I always have a couple of ragu sauce bottles laying for emergency's or quick fixes for the kids but I really prefer my home made sauce which I know is much healthier and doesn't have all the additives.

This dish consist of Angel hair pasta ( you can use any kind regular spaghetti ANY noodles my family prefers these)

-Homemade pasta sauce (click link for recipe)

-Lean ground beef ( I only use my beef with out fat)

-sautéed onions to garnish off with some cilantro (optional) or you can add any kind of  cheese etc.

-For Angel hair Boil per instrucions on box and set aside

ingredient's:
  • 2 pounds lean ground beef
  • 1 small onion finally chopped
  • 2 small tomatoes
  • 3 cloves garlic/minced
  • 1/2 tspn minced ginger
  • 1 green chili
  • 1/2 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 4 tsp olive oil
  • salt to taste
  1. Add your chopped onion in a skillet along with the olive oil and simmer for about 5mins add a little water so it wont stick.
  2. Once your onions look light browned and softened a bit add your tomatoes, green chili, turmeric, paprika,
  3. Once all this mixes and simmers together for about 3 minutes add in your ground beef and along with it add, garlic and ginger mix and cook together. Cover and cook about 20 minutes, add salt to taste and keep mixing so it wont stick.
  4. After cooking for about 20 minutes you will see the water to start to dry out, at this point you will basically fry it in its oil for another 12-15 mins keep mixing because its prone to stick at this point
  5. Now you can add 1 cup water let it come to a boil and shut off heat boil about 2 minutes have the ground beef as watery as you like I always have mines nice and thick.
FOR SAUTED ONION'S
You will need one large onion cut into to long thin strips, add 3 tspn butter and sauteed in a skillet for about 7 mins until soft light golden brown: VERY EASY


Now were almost done ready to garnish our Delicious plate together:
  • Add your angel hair noodles
  • pasta sauce, generous amounts
  • ground beef ( as much as you would prefer)
  • sautéd onions
  • cilantro (optional)

Home Made Extra cheesy sticks with Home Made Ranch

In my home, weather its pizza, pastas, or noodles that day theirs Raving fans over my dinner table. "My Kids" they love them.. If it was up to them, they would have these 3 things for breakfast, lunch and dinner... So Today after tiding up my messy house,( torn apart with jumping, wrestling, and all the Lego pieces, and toys in every corner) I decided to bake up a quick snack for my boys.. I call them My Home Made Extra Cheesy Sticks.. Let me tell you these baby's are to die for.. You'll be hogging them up like a little kid, plus their made so quick and easy with just some simple ingredients, everyone probably has in their pantry's and refrigerator.. Give them a try today Im sure you'll love them, LETS PUT THIS THE OTHER WAY "Your'e kids will LOVE you!!!!!

Ingredients:
prep time with bread 10 minutes, with dough 1 hour
Oven 325

Bread any kind such as French bread etc. Or my very special pizza dough ( click link for recipe )
2 cups shredded mozzarella cheese
1/2 cup Parmesan cheese
1 cup Colby jack cheese
1 cup Pasta, Pizza Sauce (any Brand)
2 tsp butter


Directions:

Lay out your Bread if its French bread cut in the middle and on one side of bread add a little butter evenly, now add your pasta sauce a thin layer.

If your using my special pizza dough like I did you would roll out and lay in a square baking pan, brush off with butter then add pasta sauce

If you are using any other kind of bread do the same.

Next add a generous amount of your favourite cheese

Now you will put it in the oven at 325 for about 15 mins, or if you have a toaster oven you can use that as well

Once all the cheese has melted put your oven or toaster oven on broil to cook up the cheese on the top

Once it looks like mines in the pic your all done, cut into little pieces and enjoy.

 

For the Homemade Ranch you will need:
Servings for 4
  1. 1/2 cup mayonnaise
  2. 1/2 cup buttermilk
  3. pinch of salt
  4. pinch of black pepper
  5. 4 tbs of sour cream
  6. 1 clove garlic crushed or garlic powder
  7. 2 tsp chopped parsley
In a bowl mix mayonnaise, and all the above ingredients for 2 min.
Refrigerate for up to 30 min before serving.
Serve cold and enjoy

Spices are used in different forms - whole, chopped, ground, roasted, sauted, fried and as topping. They blend food to extract the nutrients and bind them in a palatable form. Some spices are added at the end as a flavouring and are typically heated in a pan with ghee or cooking oil before being added to a dish. Lighter spices are added last, and spices with strong flavour should be added first. Curry is not a spice, but a term used by western people and refers to any dish in Asia or all around the world.

Important Spices you need in your pantry or your kitchen to achieve in making delicious Asian Food.


If your just a learner or a expert cooking all the time, Its very important to have the main spices so your ready to cook up those tasty meals. These Main Spices im going to list below, bring a special taste, and special aromas to your food, giving you smiles on your dinner table:)
They can be bought at any food shops. Usually Halal, Asian shops or your neighborhood Pakistani, or Indian store. There are so many too list, I individually think these are the most important, but theres much more you can use.

  1. Turmeric/haldi
  2. Red Chili Powder
  3. Cumin Seeds/Zeera
  4. Bay leafs
  5. Black Pepper
  6. Salt
  7. Garam Masala (usually in a box) or homemade using, whole black pepper, cinnamon stick, zeera, loang/cloves, bay leafs Grinded together in a blender.

Lets Celebrate The Royal Baby with a No-Bake Oreo Lasagna Pie


Today I decided to post my special sweet recipe in the happiness of  Prince Williams and Kate's new Baby Boy. We Should all Celebrate Shouldn't we? After all a new King Is Born.

This recipe was taught to me by a good friend, about 10 years ago I did make a few slight changes to the recipe within the years, but every time my family and I eat this  Oreo Lasagna pie it bring's back so much memories. Memories of laughter, Happiness, and joy, and the best part of this recipe is NO BAKING So I would like to share this recipe with all of you today..To bring Happiness to your hearts, and homes:)



Ingredients you will need for one heck of a Pie

Makes a med size Lasagna pan serves 10 or more, or you can use a 12-15 Inch round pan

1 Package Regular Oreo Cookies (about 36 cookies) Leave out about a cup for top layers
6 Tbs Butter Melted
2 cups of  Cream Cheese Softened
1-4 cup Granulated Sugar
2 table spoon cold Milk
4 cups whip cream (cool whip any brand) Divide in 2 parts
4 cups of  Vanilla Ice Cream


Method:
Crush The Oreo cookies, Put them in a Ziploc bag or use a food processor( if your lazy like I did)
Get a lasagna pan and layer the crushed cookies, pushing down with the palm of your hand.
Get your softened butter, and pour this over the Oreo cookie crumbs, put this in the refrigerator for a few minutes while your working on the other half.
In a separate bowl mix  cream cheese, sugar, whip cream, milk, and vanilla Ice Cream.
Mix together for about 2-4 min, to get a nice smooth consistency
Pour The mixture over the crushed cookies smoothing out evenly
Then Layer with crushed cookies
Now put the other portion of  your whipped cream (cool whip) Layer it out
and layer again with the rest of the cookies
Put in the freezer for 1 hour before serving, serve chilled or cold

Chicken Chili Cheese Shawarma Wrap


 
Chicken Chili Cheese Shawarma Wrap... Chili chicken made with Spices, and Seasonings, with fresh Salads, Veggies, Cheese, and a mouthwatering Chutney. Wrapped in a Soft Chewy Tortilla.


I have my hands full with my 3 boys a houseful of cleaning, and my Ramadan Ibadat. So I know what It feels like when all you Mom's don't have a clue about what to cook, when your busy with everything. That's why I want to share my quick & easy yet so tasty and delicious recipe with all of you. This is a great Meal for Iftari, There just made in minutes. My kids love To grab them on the go, I  put all the leftovers away in the refrigerator and just heat them up for the kids for lunch...Try some today


Ingredients for 8-10 Shawarmas

For the Chicken mix
1 lb boneless chicken breast washed, cut, sliced
4 tbs olive oil ( or any brand you preffer)
1 tbs  ginger garlic paste
1/2 cup of yogurt
4 tbs SHAN Tikka Masala ( I prefer SHAN but you can use any brand )
1 tsp salt ( or according to your taste)
1/2 tsp red chili pepper
2 lemons squeezed


For the Toppings
1 big onion diced or sliced
2 big tomatoes/sliced
2 bell peppers/sliced
1 cucumber/diced
iceberg lettuce/chopped

1 pack Tortillas ( I used Pre packed Tortillas, often used for burritos and wraps you can get from any grocery store)
2 Cups of grated Cheddar Cheese ( or any brand you prefer)

Method:
In a bowl add your chicken, yogurt, ginger garlic, salt, pepper, tikka masala, and lemon juice.
Mix all the ingredients together and refrigerate for 15 min.
Now in wok or pan heat your oil and add the marinated chicken, stir cover and cook for 10-15 min on medium flame. (adding a bit of water occasionaly so it dosent stick).
Remove lid and stir again, once you see the chicken releasing oil and the gravy is dry remove from heat.

Wash and cut your toppings Mix and put them in a bowl

Lastly we will make our quick and delicious Chutney to Garnish it off:

Add your 1 cup yogurt, With some garnished (minced up cilantro) I usually use a juicer to mince it very small. Add Salt to taste and little dash of lemon.



Now assemble your shwarma's
Lay out a Tortilla put about 2-3 tbs of the chicken mix, add Salad, and 2-3 tbs of chutney ( or as much as you prefer)
Now add a hand full of cheese on top of it
Then  we will wrap the shwarma, kind of like a envelope, or a burrito.
 I usually make a paste out of Allpurpose flour (add 3 tbs of flour with 1 tbs water, mix and apply that to close the shwarma on the sides like a burrito

Heat up a Tawa or nonstick pan on low heat grease with oil and cook for about 1-2 min on each side. By doing this you have a crispier cooked shwarma, and the cheese is all yummy and gooeeyy soft.


Cut In the middle if you prefer or eat whole, serve with fries, salads, or your favorite fizzy drink and enjoy:)

Badam Ka Kheer Pakistani Indian Rice Pudding

Today I decided to Post a Sweet Dish I made, Since we all love to have Something sweet after Iftari. "Don't we"

Kheer is a dessert made out of Rice that's why its called Rice pudding. A famous sweet dish from Pakistan and India, It consists of  Rice, Milk, Cream, Crushed Cardamons, butter, sugar topped with your favorite toppings of nuts, pistachios, or almonds..
Its boiled until it becomes  thick like a pudding. Bringing you Exotic, flovours, and aromas in your mouth, reminding you of back home or when you were a child. Many People enjoy this sweet dessert on Eid  and Diwali. Its like a family Tradition Dessert. Heres the Recipe hope you will enjoy...

Ingredients: makes a big bowl serves 4-6
1 cup of basmati soaked and washed rice
5 cups of milk
1 cup of sugar
2 tbs butter
2 tbs cream
4 cardamom seeds crushed
Almonds nuts crushed for topping

Method:

Put the rice, milk, sugar, butter, cream, and cardamon  in a pot.
Bring to a boil and simmer, until the rice is soft and you see the grains of the rice are breaking up.
I like to add a little bit of the nuts inside of the kheer when its boiling. 
Taste to see if you need more sugar.
Remove from heat garnish in a nice bowl and top with the toppings of your favorite nuts.

Enjoy warm, or chilled

Chicken Chow Mein Noodle's


This recipe is for our scrumptious Chicken Chow Mein Noodles which are so delicious and healthy. I always try something different some thing of my own. So with this I used fettuccine noodle's  and yummy they turned out so good. So light, healthy, and delicious its a must try.

Ingredients

(serves 8)
  • 2 lb boneless chicken breast (cut into about 1 inch cubes)
  • 1/3 cup soy sauce ( any brand will work)
  • 2 cloves garlic ( minced)
  • 2 bell peppers
  • 1 large onion
  • 2 tomatoes
  • 1 small green Chile ( minced very tiny)
  • about 20 baby carrots
  • 1/2 pound mushroom
  • 1/4 cup olive oil
  • 1 tsp turmeric
  • 1 tsp paprika
  • 2 tsp oriental seasoning (Optional) I used Shan oriental seasoning
  • salt to taste (be careful because the soy sauce is already salty)
  • a little dash of Chinese salt
  • 1 1/2 pound fettuccine noodle's
  • ALL THE VEGETABLE SHOULD BE CUT THIN LONG SLICES
Directions
  1. Before we start cooking our chicken Boil water per fettuni directions and boil fully cooked and add a little salt. ( once cooked drain and set aside)
  2. In a large skillet add your olive oil and add in chicken. Also add in garlic, onion, turmeric, paprika and a tiny bit salt and let that cook uncovered for 10 minutes.
  3. Next add in your oriental sauce, green chili, tomatoes, bell pepper, mushrooms and soy sauce. Also add in a little dash of the Chinese salt.
  4. You will now cover the skillet once you add all the vegetables etc in and let cook for another 7-10 mins.
  5. Remove cover of skillet and your chicken should be fully cooked and the vegetable will still have a little crunch to them. Turn off heat and add your noodles into the chicken skillet mix all together and add a little sprinkle of soy sauce. Cover the skillet until your ready to eat wait atleast 15 mins so the noodles can absorb the spices. Enjoy your Delicious, easy and healthy chow mein noodles. Chicken Pakora for Iftari Ramadan

My family and I are big Pakora Fans so I'm always tinkering around in the kitchen trying something new. I Made these and it was a hit. These Chicken Pakori are so Delicious its hard to pass them up

 
Ingredients:
  •  1 lb Boneless chicken breast cut into 1 inch cubes                                                                 
  • 1 tsp dry cilantro powder                                                                                                       
  • 1 tsp garam masala powder                                                                                                   
  • 1 tsp paprika                                                                                                                          
  • Salt to taste                                                                                                                           
  • 1 garlic clove                                                                                                                        
  • 1 cup besan flour                                                                                                                  
  • small bunch of cilantro                                                                                                           
  • oil to fry in                                                                                                                                
  • 1/2 cup plain yogurt                                                                                                                
  • 1/2 tsp red pepper                                                                                                                
  • 1/2 tsp ground cumin                                                                                                             
  •  
 
Directions:
 
First we will Marinate our chicken So add your cubed chicken, yogurt, garam masala, garlic,  paprika and a little salt about 1/2 tsp. Mix this all together and set aside while we make our besan flour paste.
 
For our Besan flour paste we will add The besan flour, red pepper, ground cumin, salt to taste, chopped up cilantro and dry cilantro. Mix this with a little cold water at a time the paste will be thick not thin just enough for the coat to stick to the chicken
 
Heat up oil about 4 cups because these will be deep fry ed. Coat each chicken cube at a time and fry on medium heat for about 4-5 mins. Do not add to many at a time give them room, because they become soggy if theres too much in the pan. Once fry ed take out and lay out on a dry kitchen towel to absorb excess oil and enjoy with any ketchup, chutney or any dip you desire. Enjoy  
 
 

 
 
 
 
 
 
 

Tandoori Chicken Cheesy Rice

Im always thinking of something new and different to cook. My kids love cheese and chicken so I just put this recipe together that turned out so delicious. Its also a great Meal for Iftari in Ramadan. I always try to add some thing from each food group. This will have a lot of vegetables, chicken, and rice then it will be baked to perfection... Give it a try I'm sure you will enjoy it

                            Tandoori Chicken Cheesy Rice


Ingredients
(serves 6-8)
  • 2 lb boneless chicken breast
  • 16 oz Basmati rice it can be a little more
  • 1 bell pepper
  • 1 tomato
  • 1/2 tomato sauce
  • 1 medium onion
  • 1 cup plain yogurt
  • 2 tpsn olive oil
  • 2 cups chedder
  • Salt to taste
  • 2 tsp shan tandoori masala
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/2 red pepper
  • 1 tsp lemon juice
  • 1/2 tsp cumin (for rice)
  • Cilantro to garnish
  • 2 cloves garlic
  • Black pepper
Directions:

  1. First we will set our water to boil rice, it will be regular fully cooked white rice. Add water I added about 24 oz water for the 16 oz rice. Once we put our water to boil you can add your cilantro and some salt to taste (moderate salt)
 
 
 
While we boil that we will start with our chicken. Cute chicken into small cubes heat oil and in chicken with garlic fry for about 1 min. Next you will add your spices which is the turmeric, paprika, red pepper, salt to taste and lemon juice. Let that cook thru for about 4-5 mins on low heat.
  1. Now you will add your yogurt stir in and let cook for about 1-2 mins. Then add all your vegetable's onions, tomatoes, bell pepper, and tomato sauce. Cover the skillet and cook about 5 mins. The mixture will be not too dry and not to watery (Image above)
  2. By now your white rice will be cooked and we can mix together our delicious rice. You will need a baking pan. Add all the rice at the bottom of the pan. Next pour over our chicken mixture, Top with your cheese and garnish with cilantro and black pepper.
  3.  
    We will bake this for about 15 min on 350 in the oven Your all done enjoy your delicious Tandoori Chicken Cheesy rice.

Ingredients:
 (serves 6)

-2 lb Boneless chicken breast
-1/2 cup yogurt
-1/2 tsp Garlic
-1/2 tsp turmeric
-  1 tsp paprika (mostly for the red color)
- 1 tsp Red pepper
- Salt to taste
- lemon juice to taste
- 1/2 cup tomato sauce
- 1/2 cup Olive oil ( Or any other oil I prefer Olive Oil)


Vegetable any kind you prefer we had

-Lettuce
-tomatoes
-bell pepper
-cucumber
-onions
Chopped really fine

Chutney

-cilantro
-1 green pepper
-2 cups yogurt
-1/2 cup buttermilk
- 1 tsp lemon juice
-salt to taste

Naan

- 4 cups white flour
- 2 tbs oil
- 1 cup of milk
- water (a little at a time just to make sure it doesn't stick to your hands)
-1 tsp salt
- 1 tbs yeast
- 1 tsp baking powder ( or if you don't have just add 2 tbsp yeast)
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                             Directions:

1) Cut chicken into 1 inch cubes, marinate with yogurt, lemon, turmeric, paprika, red pepper salt to taste, garlic and add tomato sauce marinate and set aside for about 10 mins.

2) Heat Olive oil and throw in chicken marinate cook for about 5 mins, then cover for 5 mins and then let it simmer on low heat for another 10 mins. Add a little water if it sticks

3) Now we will make our chutney: Add your cilantro and green pepper in a chopper or blender and puree it. Add that in a bowl mix the yogurt, lemon juice, buttermilk with the puree and add some salt to taste, It will be a think mixture.

4) Making dough for Naan: Add the all purpose white flour along with Oil, milk, yeast, baking powder, salt, and make a thick dough with water. I prefer warm water, Make sure the dough is thick and knead it well.

5) Cut up your veggies and Your ready for a delicious main meal that your family will love and enjoy very healthy and easy to cook. Feel free to leave any comments if you need additional help.






 








 

Gulab Jamun's

Gulab Jamuns are sweet delicious yummy balls that just savour in your mouth when you bite into them. Especially when there home made. In India or Pakistan you can find lots of gulab jamuns all over the place but when your over seas, or in the States it can be hard to find these yummy treats.. So making them your self is just a wonderful feeling, and there just made with some simple ingredients in no time... So try this sweet recipe today...

Ingredients: serves 4-6 makes about  10-12  jamuns
Prep time 10 min
cook time 10 min
First prepare the sheera (syrup)
2 cups water
2 cups sugar
3 whole cardamons or 1 tsp cardamon powder
tiny pinch of orange color, and some strands of saffron
Method
Pour all the ingredient into a sause pan and cook for 10-15 min until syrup starts to become thick( do not refrigerate just put to aside at room temp.)

Gulab jamun
1 cup milk powder (Nido or any good quality brand)
1tbs semolina (sooji)
2 tbs white all purpose flour
1 tsp baking powder
1 egg beaten lightly
oil as needed for frying
Method:
Combine Flour, semolina, milk powder and mix with hand
Now add beaten egg mix with your hand, (if the flour is too thick add a couple tsp of milk and knead well)
If the flour is too sticky, put some oil on your palms and start making the balls, they should be about 1/2 inch size
Fry on low heat on both sides until Jamuns get nice and golden brown, when they are done throw them into the sheera syrup  immediately for about 10 min. So they can soak up the syrup (make sure the syrup is not to hot otherwise it will shrink the balls)
Now garnish with coconut, almonds, or top with your favorite ice cream.

Samosa Spring Rolls for Ramadan

This recipe is for our all famous Samosa Spring rolls. Very easy to make, your kid's wont pass this up and its perfect for Ramadan. You can make any kind it can be Keema (ground beef), Chicken, or just vegetables.


Ingredients:
( Makes about 25 rolls)

I made mines from Chicken, if you do ground beef or vegetables the recipe will be the same.

-l lb chicken breast (cut into 1/2 inch cubes)
-1 pack spring rolls sheets ( You can find at any Asian store or even walmart)
- 1 pack 16 oz pack of mixed vegetables ( mines had corn, carrots, green beans, and peas)
- Oil ( I Prefer olive oil)
- salt to taste
- 1 tsp Paprika
- 1 tsp red pepper
- 1/2 tsp turmeric
- minced garlic about 2 cloves
- 6 cups frying oil ( to fry rolls)

1) Heat about 3 tsp olive oil in your cooking pan, then you will add your chicken along with garlic, paprika, red pepper, turmeric, and salt. Cook uncovered for about 7 mins until your chicken gets a browned look.

2) Now you will add your mixed vegetable's and cook for another 10 mins. Do not add water because this will not be a watery filling and plus the vegetables have there own water. Once cooked poor filling onto a big tray to make sure we cool it down before we start making our rolls.

3) Now we can start to make our samosa rolls: Take your sheets apart. We will first make a flour paste to make sure our sheets stick when we make a roll it will sort be the glue. Any kind of flour will work I use all purpose white flour add about 6 tsp with 2 tsp water and mix together to make gooey sticky paste make sure its not too watery. If its too thick add a little water at a time.

5) Your sheets are square so we will be folding these kind of like envelopes. Add about 3 tsp of the chicken mix. We will be folding the 2 sides and have our mix in the middle and with your finger on the 4th corner which is the top one we will dab on some of our flour paste. Once we do that we will roll the bottom toward the top and it will stick right away because of the flour paste: Its Really easy once you make one you'll be a pro in no time.

4) Heat up frying oil in a frying pan, hot up oil add spring rolls fry for about 30 seconds on each side and your all done. So easy, quick and delicious you can serve with ketchup, chutney etc..

 

Keema Pakori (Ground beef fried dumplings)

Keema Pakori are delicious to eat any time of the day, my family and I must have pakori every night in Ramadan its a tradition. So what I do is I change different types of pakori daily so we wont get bored.

These Pakori consist of Ground beef ( Keema) and vegetable such at onions, tomatoes, cilantro, green chile's and some potatoes. Then fryed to perfection and yummy you cant go wrong with this delicious appetizer.



Ingredients:

-1/2 pound ground beef
- 1 onion ( cut in long strips)
- 2 Tomatoes ( minced in small cubes)
- 1 bunch on cilantro
- 2 potatoes cubed small
- 1 green chili
- 1 tsp paprika
- salt to taste
- 1/2 tsp turmeric ( for color)
- 2 1/2 cups besan (gram) flour
- water just enough to mix ingredients together
- Oil ( to Fry)

Directions:

1) Chop up tomatoes, onions, cilantro, green chili, and potatoes in a big bowl. Next we will add our ground beef, besan flour, paprika, salt, turmeric and mix with water. Add the water slowly a little at a time it will be a thick paste we will use about 1 to 2 cups water it depends.

2) Heat up Oil, once oil is hot add the pakori mix with a spoon one heaping full spoon about 1 inch.
   
3) Fry on medium heat for about 5-7 minutes until they turn crispy brown

4) Remove from oil and place on a napkin to drain some of the excess oil and your done

  Enjoy with ketchup, Chutney or any dip or your choice. Easy, Delicious and your kids will approve.
