Eggplant Stir Fry

When most of us think of Eggplant we think "How Boring" I always had a problem with my husband when I would say I'm making eggplant (vainger called in india and Pakistan) So I came up with a recipe that I know everyone in my family would be licking there fingers with. Egg plant Stir fry I usually serve the dish with hot naan or white rice, and soy sauce.. If you're a veggie lover like me  Give it a try today..
Ingredients:serves 4-6
prep time 10 min
cooking time 15 min 
2 round or 4 long eggplants diced/or cut long wise
1 large onion
3 large tomatoes
2 green chili's
3 tbs olive oil (or any oil you may prefer)
1 tsp salt
1tsp turmeric
1tsp red chili powder
1 tsp crushed cumin (zeera)
Method:
In a wok or pan add oil then add onions stir fry for about 5 min
Add eggplant stir with a wooden spoon
Now add tomatoes, peppers,salt,chili pepper, turmeric stir and cover for about 10-15 min cooking on med flame
Add crushed cumin top with fresh green cilantro or green onions and serve hot....

Cake Homemade Chocolate Topping

I finally got a new oven that I have been wanting for months. So I decided to make something sweet, and special something  the kids would also like.
I made a basic yellow cake made from scratch topped with Hershey's chocolate syrup.
The whole family was going crazy after it.
Here is the quick recipe hope you'll enjoy for your loved ones...

Ingredients: Makes two 9 inch square cakes
Prep time 25 min
Cook time 25-30 min

3 large eggs room temp
2 teaspoons vanilla
3/4 cup milk
2 cups all purpose flour 
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter softened
1 cup sugar
Method:
Preheat oven to 350 F grease and flour 2 9 inch pans
In a bowl combine flour, baking powder, salt, with a wire whisk
Cream butter and sugar until light and fluffy 
Beat in eggs one at a time
Add vanilla and mix until completely combines
slowly add flour alternately with milk
At the end the batter should be nice and smooth
Divide between 2 pans
Bake the cake for 20- 25 min until cake becomes nice and light yellow brown
or until you insert toothpick and it comes out clean
Cool for 5 min in pan, and then remove onto rack 
let cool and then cut into squares garnish in your favorite plate,
Add the chocolate frosting (i used Hershey's Chocolate syrup)
You can also use regular frosting just warm for about 5 min in microwave and pour over the cut cake pieces.

Chocolate Chip Cookies Homemade

Who doesn't love the word Chocolate Chip cookies........Its that warm yummy sweet taste that just goes throughout the whole house when I'm baking my chocolate chip cookies..
The cookies are just made out of a few simple ingredients, and are ready in just minutes..You can enjoy them warm and chewy with coffee, tea, or a cold glass of milk..Here is my simple recipe hope you will enjoy..

Chicken or meat Seekh Kabobs

Seekh Kabaobs are a delicious mouthwatering appetizer, and can also be served as a main meal  with your favorite naan, rice, chutneys and raita's. I usually make them when we have get togethers or partys..You can use beef, lamb or chicken They can also be grilled on a barbecue and there delicious. Here is my very quick recipe. for some very hungry people.
Ingredients:
prep time 15 min
cook time 15-20 min
1 onion
2-3 green chili's
4 large cloves of garlic or ginger garlic paste
2 medium potato's
1 1/2 pound beef,or chicken breast minced
1 egg
1 table spoon chickpea (gram flour)
1/2 table spoon salt
1/2 table spoon chili powder
1/2 table spoon coriander powder
1/2 table spoon cumin powder
handful of chopped fresh coriander leaves
10 bamboo skewers soaked in water
Method:
Process the onion green chili, and garlic in food processor until finely chopped
Finely grate the potatoes and rinse with water, make sure you get all the access water out
In a large bowl combine the onion mixture and the potatoes with the mince and the remaining ingredients. Mix well cover and put in the refrigerator for a couple of hours.
Take handfuls of the mixture and wrap around each skewer in the shape of a sausage
Place under a hot grill at the highest settings, or cook on a barbecue on high flame
Turn over once while cooking kabobs are done when both sides are crisp and browned
Serve hot with slices of lemons and bell peppers
