Fried Fish with Potato Sides

This is a great dinner menu meal. It consists of your favorite fish either cat fish, salmon, whiting whatever you prefer coated in spicy bread crumbs deep fried to give it that exotic crunchy taste. With a side dish of potatos, fried in black pepper, oregano, salt, and turmeric topped with your favorite ketchup or sauce's. I prepared this meal over the weekend, and my hubby got a kick out of it. Uncle Ben's Rice with Cucumber Salad

It was a windy day, and i was craving uncle bens (long grain) rice..Every time I make this rice its just so tasty and fulfiling The whole family just could not get enough . It turned out perfect just the way i wanted it ...
Here is the quick recipe.

Ingredients servings 4-6
2 cups uncle bens(or any brand) long grain rice
1 onion
3 tbs olive oil (or any oil you may prefer)
2 medium size tomatoes
1 tbs salt
1 tbs red chili pepper(optional)
1/2 tbs chines salt (optional)

4 cups water
Method:
In a pot add oil cut and add onion, fry until golden brown
Add tomato salt,pepper, stir fry for 5-6 min
Add 4 cups water 
Cover and cook until water comes to a boil
Add rice stir, and taste to see if more salt is needed
Cover pot with a lid , and turn flame on low so the rice simmers
Keep simmering gently for 10-15 min until all the liquid is absorbed
Serve hot immediately with your favorite raita or salads.

For my cucumber salad you will need
1 cucumber
pinch of salt 
slice of lemon squeezed
2 tbs of ranch (you can use more if desired)

Cut and dice the cucumber 
In a bowl combine the ingredients above
stir add pinch of salt and serve or garnish...

Salad Garnish done in just minutes

Today I decided to try something new with the way i garnish my salads.I thought of lining the salad instead of laying it out, and like you can see it turned out marvelous..Everyone loved it I hope you will too.

Ingredients:servings for 2-4
1 fresh cucumber
1 fresh tomato
1 fresh onion
1 fresh white radish
slice of lemon
1 salad leaf
1 slice of fresh salad
1 slice of carrot
pinch of salt optional
Method
Wash peel and slice all ingredients
In a desired plate start lining onions,then cucmber,and white radish
Layout a piece of salad leaf and add your tomatoes with your lemon
Garnish with sliced salad in the center, and add 2 slices of carrots to the left
Sprinkle with salt and enjoy with your favorite meals..Belive me it will make your dinner table look Beautiful

Delicious,Cooling Salad

This is a delicious, cooling salad that can accompany any lunch, dinner, or snack. I made this salad today when we went on our family Picnic

Ingredients you will need to serve 4-6

2 cucumbers
2 long white radishes
2 onions
pinch of salt

Method:

Wash and cut cucumber,and radishe's into round circles
get a platter and start decorating starting with the outer part of the platter with the cucumber
Then add radishes
Then add more cucumbers
Wash and cut onions long ways and garnish in the middle
Sprinkle with salt and serve. Enjoyyy

Russian Salad

There are no words to explain this delicious creamy salad. Made with fresh fruits and vegetables Great for everyday or get togethers..

Ingredients: serves 6-8
2 cups french beans
2 cups carrots
2 cups green peas
2 cups potatoes
1 small can (450) grams sliced or diced pineapple
2 apples
1 1/2 cup fresh cream
2 cups mayonnaise
1 boiled beet root
salt to taste
black pepper to taste
2 table spoon sugar

Method:
Cut the vegetables into small pieces and boil.
Chop the pineapples and apples
Mix the fruits and vegetables together
Mix the mayonnaise and cream
Mix the mayonnaise and cream thoroughly with vegetables,add salt pepper and sugar
Line a salad bowl with salad leaves. Pile the salad leaves in the center
Decorate with slices of  beet root
Serve Chili Cold with your favorite Lunch or Dinner.
Or Serve as  an appetizing snack Enjoyyyyy







Quickest Cake and Pudding Triffle


Today's recipe is for Our Delicious Cake and Pudding Triffle, your family will come back wanting more its very easy to make and Super Good.




Ingredients: serves 8

1 Tub of cool whip (any brand)
6 cups pudding Vanilla, or any kind of custard ( I used vanilla Instant pudding)
1 can of fruit cocktail 16oz
1 can on diced pineapple's 16oz
Yellow cake cut into 4x4 inch squares (you can use the The ready make boxed cake mix or make your very own from scratch, I make mines from scratch.Click on this link for the Homemade Cake Recipe

Method:

In a big glass bowl you will start off by layering the bottom with your cake pieces add about 4 pieces at the bottom, layer with 2 cups of pudding and add about 1/2 cup of your fruit cocktail and 1/2 cup pineapple cubes.

Once you add your fruit add a thin layer of cool whip, not too much enough to just cover the fruit.
because we will make 2 more layers. So total of 3 layer for this bowl. Next go ahead and redo this for the next 2 layers on your 3rd layer if you have any extra fruit just add it on and spread the remaining of the cool whip on it as well. Refrigerate for about 1 hour and your ready to serve. Very easy and so delicious your guest will love it.
 



 
 






    Masoor Daal with Desi Ghee


    Masoor Daal is one of my favorite lentil dish.Its a simple dish yet so tasty and fulfilling. Masoor Daal is usually served with rice, one or more vegetable dishes,and plain yogurt but i like to have my daal with flour tortillas,and Desi ghee. Here is my quick recipe.
    Ingredients serves 6-8
    1 1/2 cup masoor daal rinsed and soaked
    6 cups of water
    2 tbs olive oil
    2 tomatoes chopped
    1 tbs salt
    1 tbs red chili pepper
    1 tbs turmeric
    1 tbs ginger garlic paste
    1 tbs cumin crushed
    1 tbs dry cilantro
    2 green chili peppers
    fresh cilantro for garnish
    2 tbs Desi ghee
    Method:
    Heat oil in pan add ginger garlic paste and fry until light brown, then add in tomatoes,chili peppers, salt, pepper, turmeric, and cilantro. Cover and cook for 5-10 min.Then add in your washed pre-soaked daal. Stir and cook for 5 min then add in the water, Cover and cook for  about 10-15 min.
    Once you see that the daal is soft enough and the gravy becomes nice and thick, Garnish with fresh cilantro, and crushed cumin.Serve with Desi ghee topping, and your favorite rice, or naan.

    Firni (vanilla custard) topped with Almonds





    It was a cold and rainy day out side today. My husband asked for some Firni (custard) so I decided  we would have nice and hot Vanilla custard for dessert. It turned out to be  very delicious and the kids loved it too, Our dessert made us all nice and warm.


     Ingredients :
    4 cups of milk
    half cup vanilla  firni powder (any brand)
    half cup of sugar (taste and add more sugar if needed)
    1 tea spoon of butter
    2 lachi seeds(cardamon)
    half cup of water
    and a whisk.

    Method:
    Pour the 4 cups of milk,sugar,cardamon,and butter into pot and boil. for 15 min. now in a separate bowl add your firni powder,mix in water and whisk so it performs a thick paste. 
    Now mix the paste into the boiling milk
    keeping whisking for about 2 min on very low flame
    Then remove from heat pour into your serving bowl immediatly' or other wise it will get clumpy"
    Now garnish with your favorite toppings (i had almonds) and

    Chaat With (Gram Flour) Dumpling's


    Chaat Is a Mouthwatering Savoury snack, that tastes delicious at any time of the day. It consists of Yogurt, Masala, Dumpling's and your favorite spices. Here is a quick recipe

    1 kilo yogurt

     for the dumplings you will need
    2 cups of besan flour (gram flour)
    1 pinch of baking soda
    half tea spoon of salt
    1 tea spoon of SHAAN chaat masala
    and some water for mixing.

    for the masala you will need
    1 onion
    1 tomato
    1 green chili


     Heat a frying pan with oil ,in the mean while mix in all the ingredients to the besan flour add in water stirring occasionally with whisk,add chaat masala salt and baking soda.once you have a smooth dough  start to fry the dumplings you can use a table spoon to put them in the oil.Once they are light brown remove from fire , and put them on a napkin or baking sheet, now let them cool for about 2 minutes, after they have cooled, soak the dumplings in water for 30 seconds, and remove immediately The reason for this is so they wont absorb all the yogurt.
    Now in the yogurt add in the onion,tomato,green pepper,and stir. Then add the pre soaked dumplings(baray) in the yogurt sprinkle with some shan chaat masala.  Wala!!!!!!!!! you have yummy soft dumplings in yogurt for the whole family to munch on... Hope you enjoy...

    Onion Ring Pakora's

    Today we had a get together and I made Chapli Kabob burgers with Onion Ring Pakoras. These are the best Onion Pakoras(Indian Fritters) They're delicious, simple, vegetarian friendly and cooked in no time.

    Ingredients: servings for 4-6
    4 big size onions
    2 cups gram flour (channa atta)
    1 tea spoon salt
    1 tea spoon red chili pepper
    1 tea spoon turmeric
    1/2 tea spoon baking soda/powder
    1/2 cup water (for mixing flour)
    oil for frying

    Method: 
    Wash onions,and cut round thin slices, Heat up your oil in a pan, In a bowl add your gram flour, salt, pepper, turmeric, and baking soda, mix with water so there's no lump's of flour until it becomes nice,and smooth (make sure the paste is not to watery otherwise the pakoras will not be crispy and will  absorb too much oil)
    Once your oil is ready dip the onion rings in the flour one by one and fry in your oil until they become nice and golden brown. Drain on a paper towel, or cookie sheet to absorb access oil. 
    Serve hot with your favorite, chutney's or dip.
    Or serve as a side dish, with burgers, fish or rice.

    Home Made Doughnuts



    Today i invited some of my family members over for tea,and i made some delicious doughnuts,that were finger licking good.They went crazy after them.Here is the recipe

    Fried Chicken, Brocoli, and Potatoe's


    This is a great satisfying meal for dinner..You have your Chicken, veggies..and a great side dish of potatoes..

    Ingredients you will need: serves 4-6
    For chicken fry
    1 whole chicken cut in pieces/2.25 lb/or chicken breasts
    1 cup yogurt
    1 tea spoon ginger garlic paste
    1 tea spoon salt
    1 tea spoon red chili pepper
    2-4 lemons squeezed
    2 cups all purpose flour (maida) sifted in a Ziploc bag
    Oil for frying
     For Broccoli:
    2 stalks broccoli
    1 tea spoon black pepper
    1 tea spoon salt
    1 table spoon olive oil.
    For potatoes:
    4 potatoes  diced or cut
    1 tea spoon salt
    1 tea spoon black pepper
    1 tea spoon oregano
    1 table spoon olive oil
    Method:
    First marinate chicken in a bowl, add yogurt,ginger,garlic,salt,pepper and lemons, sit to a side for about 1 hour.
    Now drain access water out of marinate,get 2-4 pieces of chicken depending on your Ziploc bag,and shake until chicken gets a good coat all around. Then heat up your oil add in the chicken pieces one at a time.cover and fry on medium flame for about 15 min.or until the chicken is nice and tender.and crispy brown on each side.Then place on a cookie sheet to absorb access oil.
    In a separate pan add oil  broccoli, salt, and pepper stir occasionally,and fry for 10 min.(It depends on how you like your vegetables I prefer them to be nice and juicy, not soggy)
    Then in a separate pan put in your oil, add the potatoes.with salt, pepper, oregano and stir fry for about 15 min.(cook on very low heat with a lid so the potatoes get nice and soft,yet do not get mushy)

    So there you go folks,A delicious home made meal in no time...

    Shami Kabobs


    Don't feel like going out and Barbecuing?Then here is your option and it is a great one.Fun and easy to make Shami Kabobs. Assembling the kabobs is something everyone in the house can help with. Shami Kabobs is a must have in every Asian refrigerator Because you can just pop them out, Fry and serve when the unexpected guests arrive.

    Ingredients you will need to serves 6-7
    1 kilo or 2 pds minced meat
    1/2 cup of (gram lentils) channa ka dal soaked in water
    1 table spoon salt
    1 table spoon red chili powder
    1/2 tea spoon cumin
    1 tea spoon coriander
    4 cloves garlic or 2 tea spoon ginger garlic paste
    2 table spoon fresh coriander
    2 table spoon mint leaves
    2 green chilli's
    1 egg
    oil for frying

    In a Pressure cooker put 5 cups of water then add minced meat, soaked lentils,cumin seeds,coriander,salt,chili pepper,and garlic.Cover and pressure cook for about 20-30 min.(don't put alot of water in cooker ,otherwise  it will be to soft and runny)
    Once the meat is tender and the gram lentils ,are very soft. add in your fresh coriander,green chili,and mint leaves.mix for about 5 min.Then add the ingredients to a chopper,or a blender chop until you perform a paste(like the pic above)
    Then pour into your bowl. Heat your pan or (tava) Whisk the egg,make your kabobs into 11/2 inch patties,dip in egg and then place on your pan.Shallow fry with very less oil, for about 2-3 min on each side, Place on a cookie sheet once done.
    Serve hot with your favorite salads,chutneys,ketchup,and rice's

    Note:if the paste is too soft or runny add in 2 table spoons gram flour.
    To freeze kabobs,cook them half way and place on a cookie sheet,or pan and refrigerate until they get hard,then you can place them in a bag or container in the freezer section.

    Donut's made in a jiffy
























    Today's recipe is for doughnut's that are prepared in just minutes..
    Which mom wants to go spend so much money at the doughnut shops all the time, when your kids ask for them or even when u want them your self..This can be expensive, and even time consuming. So all you savv'y Momma's out there this recipe is for you :)

    Ingredient you will need to make 15-20 doughnuts
    2 cups all purpose flour (maida)
    1/2 cup sugar
    5 tbsp butter or margarine (at room temp)
    1 egg
    2 tsp baking powder
    pinch of salt
    drop of vanilla essence (optional)
    You can use a cookie cutter or just a cup or glass like i do for the doughnut shapes and a bottle cap for the doughnut holes.
    milk to knead the dough ( only if you need it,do to the size of the egg you might not even need too much milk because you don't want the dough to get too soft or get sticky. so just add a little at a time with a tea spoon if needed) 

    First add the flour in a bowl then add in your butter,and mix with your hands until flower gets nice and crumbly,then add egg,and mix more dig through the dough with your hands making the dough nice and    fluffy.Then add your sugar,salt,baking soda,and essence,and mix more for about 5-8 min.
    Then prepare the dough make a big ball and roll,the thicker the dough,the thicker the donuts,and the thinner you roll out the dough the thinner donuts you will have.
    Heat oil in pan put in a crumb of flour,and see if it rises to the top of oil,if it does then your oil is ready to go.Put in your donuts one at a time,and fry on both sides until they become nice and light brown. Then  place on a cookie sheet to cool.
    You can serve your donuts hot with tea,or then cool,and ice them with your favorite toppings for the kids.You can also Put some away for later,In a air lock container like i do for the kids or when unexpected guest arrive...
    You can even make mini donuts out of the doughnut holes.(glaze them with your favorite icings)

    Today my 8 year old asked me if i could make lasagna,and i told him sweetheart our oven is not working,and we took it in to the shop to get it fixed.He insisted on having it for lunch,

    Very fast and easy to make.Today I will be showing you how to make Fajitas Desi Style.

    Recipe of the day: Tandoori Chicken Tostada's


    1. A Delicious and yummy Crunchy corn tortilla topped with our famous tandoori chicken and your favorite salad's...



    Ingredients:

    -1 lb boneless chicken breast
    -1 tbs olive oil (or any kind of oil)
    -salt to taste
    -1 clove garlic crushed
    -1/2 tsp paprika
    -1/2 tsp turmeric
    -crushed red pepper to taste (depends on how hot you want it)
    -1/2 plain yogurt
    -12 Corn tortillas, you can buy ready made or make from scratch ( recipe for corn tortillas will be listed below if you want to make at home)
    Toppings:
    It depends on what kind you want any toppings are great you can garnish with tomatoes, onions, lettuce, salsa, sour cream or cheese. I only used lettuce, sour cream and a little hot sauce because my kids are very picky and don't prefer any thing else.

    Directions:
    First we will cook our chicken. Cut your chicken in little cubes marinate it with the yogurt, salt, paprika, turmeric, crushed pepper and garlic mix it all together set it  for about 5 Min's. Next you will heat up your oil and add the chicken mixture. Cook for about 7-10 Min's add a little water if it sticks cover and cook another 7 Min's it should look like the picture when its cooked. 
    once the chickens cooked all we have to do is get ready to put our tostada's together. You can cut up your toppings, add a little of the chicken on the tostada with your toppings. I'm adding lettuce, sour cream and hot sauce, and your ready to eat this recipe will serve 6. Hope you enjoy making this easy and delicious recipe. I have also included the recipe for your tostada's if your making from scratch which I most of the time make from scratch. However when I'm in a hurry and need a quick fix for the kids I just use the ready made one's. Enjoy
     
     
     
     

    Achar Gosht


    This is a Amazing aromatic dish made with beef to satisfy your hunger.I myself love to prepare this dish on Eid. It's juicy lemony flavor will take you off of your seats...


    Ingredients you will need:
    1 kilo beef or 2.2 pounds 
    2 cups of yogurt
    1 onion 
    4-6 green chili peppers
    1 table spoon garlic ginger paste

    1 tea spoon white cumin
    1/2 tea spoon mustard seeds
    1/4 tea spoon fenugreek seeds
    1 table spoon red chili powder
    1 table spoon dried mango powder
    1 tsp cumin powder
    4 table spoons olive oil (or any brand)
    cooking directions
    Get a bowl add a little yogurt,red chili powder,cumin powder,pinch of salt ,and mix it well,this will turn into a paste for the chilis.
    Now cut the chili pepers in the center,and fill the paste into it.(keep this to aside)
    Then cook your meat,add all of the other ingredients cover and cook until meat is tender.
    Now pour water as required to make a thick gravy ,then add in the stuffed peppers cover and cook for another 10 min,or until the gravy is nice and thick.
    Garnish and serve with Hot Fresh Naan..

    Recipe of the day: Homemade Chicken Alfredo with Fettuccine noodles


    Chicken Alfredo with Fettuccine:

    Ingredients: Serve' 4 very hungry people

    1 Pound Fettuccine noodles
    1 Pound boneless chicken breast
    1 bottle Alfredo sauce any brand
    1/2 tsp Garlic salt
    Parmesan cheese
    salt to taste 
    black pepper to taste
    2 tsp olive oil
    2 cups milk


    First you will put the noodles to boil, boil about 15 mins until cooked, Drain and set aside

    Now we will start to cook our chicken

    Add in your oil and chicken. Then add your Garlic salt about 1/2 tsp with black pepper and you will cook that for about 3 mins make sure you keep stirring because we don't want it to stick. Then once the chicken whitens up and you've fryed for about 3 mins, you can add in your 2 cups of milk and a little salt to taste, Stir and cover cook for about 7 mins on low heat until the chickens cooked. Do not let it get too thick, if it does you can add a little more milk, it should look like the picture



    When your chickens all cooked and you have a creamy sauce, you will add in your bottle of Alfredo sauce and make sure the heat is on low not too high. Mix it up all together then add in your noodle's stir evenly all around. Garnish with your Parmesan cheese and enjoy Yummy:


    Chinese Vegetable Fried Rice

    Hey guys no Chinese meal is more delicious than Chinese vegetable fried rice.This dish combines the yummy flavor of rice, and all sorts of vegetables , so you can enjoy this meal in just minutes....and to all the Momma's the kids will get all there veggies..Hoorayy
    Ingredients: for the rice
    servings for 4

    1 Kilo of  rice/4 cups
    1 tea spoon salt
    1 tea spoon Chinese salt
    For the Vegetable mix:(you can use any vegetables you desire,or prefer)
    1/4  cup olive oil (i preffer but you can use any)
    1 tea spoon salt
    half cup soy sauce
    1stalk of green onions
    2 carrots
    1 onion
    2 cloves of garlic
    1cup of peas
    1 stalk of celery
    1 tea spoon of black pepper

    For the rice: first pre soak the rice for 10 min then  put 4 quarts of water to boil put in the salt,and the Chinese salt cover and when it comes to a boil put in your rice. now let the rice boil for about 15 min until it is half way done.then you  remove and strain the rice and put to a side.
    In a frying pan or a wok put in the oil let it heat up throw in the onions stir fry and then add in the garlic ,fry for 3 minutes then put in all the vegetables at once stirring constantly,  add in the salt, black pepper, and soy sauce, cover and cook for about 10 min. then you go ahead and add the rice to the vegetables for 2 minutes,now cover and cook on very low heat for 5 minutes. There you go there is steaming hot and delicious Chinese food for the whole family... you can serve and garnish with green onions...
