The Moistest Cinnamony Carrot and Apple Cake

If you love Carrot Cake, and IF you love Apple Pie Then Its your lucky day!!! Because Today's Recipe is for a Moist, Fluffy, sweet, and soft Cinnamon Carrot and Apple Cakee.. Full of carrots, and apples to give it that unique taste.. The apples give the cake that apple pie taste, with all the cinnamon. While you still get the taste of  the yummy carrots.. If you've tried my
"The Moistest Banana Cake Ever" then I'm sure you know what I'm talking about, the cake is so soft and Moist. With a perfect Nutty Cinnamon topping. It tastes unexplainabley good with a cup of tea or a big cup of JO" Coffee..:) I made the cake to take to my Mom and Dads place for dinner a couple of nights ago.. It was so cold, and chili we enjoyed the cake after dinner.. Everyone absolutely loved it and I hope you enjoy this cake with your loved ones for the holidays....Happy New Year........



Prep Time: 20 minutes
Baking Time/Oven: 35 minutes. 350 degrees
Ingredients:
2 1/4 cups all purpose flour
3/4 cup sugar
1 cup brown sugar
1 1/2 teaspoons baking  powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups of peeled, and thinly diced apples
2  cups of shredded carrots
1 1/2tablespoons cinnamon
1/2 cup cooking oil
1 cup chopped nuts, and almonds for topping of cake
3/4 cups of buttermilk or sour milk
2 eggs
2 teaspoons vanilla

Method:Instructions

Grease and lightly flour Two 8'1 1/2 inch, or one 13*'9 1/2 inch baking pan, and put to aside.
In a mixing bowl, add flour, baking powder, baking soda, salt  mix together and put to aside.
In a large mixing bowl add butter, sugar, brown sugar and eggs. Beat well with a hand mixer for about 2 minutes..
Add buttermilk or sour milk, and vanilla, carrots, and apples Beat with a whisk, or a mixer on medium speed for about 1 minute until everything is well incorporated.
Add Dry ingredients, to wet mixture and using the help of a rubber spatula mix well.( the dough should be thick)
 Pour batter into the prepared pans.
Sprinkle with desired nuts, and almonds( I even sprinkled some cinnamon, a spoon of brown sugar, and some shredded carrots  on top of the cake)
Bake in a 350 oven for 30-35 minutes. Or until a inserted toothpick comes out clean.
Cool cakes, on wire rack for 10 minutes. Remove from pan and cool thoroughly on wire rack for up to 1 hour. Serve with Tea or your favorite toppings of cool whip or vanilla ice cream..
