EggPlant Fried Fritters / Baingan Pakoras

I know a lot of us who don't love the word Eggplant. When I tell my Kids I'm making eggplant or baingan for lunch or dinner they throw a fit..  They don't like them at all.. But when I make my eggplant fritters or Pakoras their so delicious that my kids don't even realize what they're eating yet their getting their veggies. They taste so good with yogurt chutney, ketchup or my Ramadan DIP

These Crunchy Fritters make a great appetizing snack. Usually when I have unexpected guest I just look in my refrigerator and find any veggies I can, and use this recipe for the mixture, and I have hot crunchy, fritter pakoras made in minutes leaving my guests speechless!

You can use this recipe I used for the baingan pakoras for various types of vegetables, like potatoes, tomatoes, zucchini and etc.
So heres the quick and simple recipe for this great appetizing snack

serves 4-6
prep time 10 min
cook time 15 min
stove top frying

2 large eggplants washed & sliced round or length wise
1 1/2 cups all purpose flour (maida
1 teaspoon salt
1 teaspoon turmeric
1 teaspoon red chili powder
1 teaspoon crushed oregano
1 teaspoon crushed cumin seeds (zeera)
1/2 teaspoon Chinese salt
3/4 cup water ( to achieve a thick paste, if you think you need more add little by little with tablespoon)

  1. Wash, dry and cut your eggplant round, or length wise
  2. In a separate bowl, add your flour, salt, turmeric, chili pepper, cumin seeds, coriander, and water.
  3. Using a fork or whisk, mix the flour leaving no trace of lumps
  4. Heat 2-3 cups of vegetable oil in a wok, or frying pan
  5. When oil is ready, one at a time using your hands dip the eggplant into the paste mixture and place it in your frying pan,( you can use a fork to place it in the oil)
  6. Fry on both sides for about 1 minute each side, until the color gets crispy brown.
  7. Place them on a paper towel to absorb access oil
  8. Enjoy with your favorite dips, and chutneys
