Chicken Tikka Malai Boti

                                                  Chicken Tikka Malai Boti

Today I had so much to do, I could not stand in front of the Stove and cook for hours so I decided to cook up  my special Chicken Tikka Malai Boti recipe. Its Chicken, lamb, or  meat marinated in Masala, onions, tomatoes, ginger garlic, chili's, milk, yogurt and cream. Then put together in a dish and baked in the oven. Everything cooks together Its so moist creamy and fulfilling. and you don't have to stand around to it..(of course you have to go check the oven every 15 min. So it dosen't burn. I usually serve the Malai boti with naan, white rice, or over a salad. Here's the quick recipe, my family loved it for Iftari.

Ingredients serves 4-6

1 lb chicken breast (or you can use meat or lamb)
1 big size onion/sliced or diced
2 tomatoes/sliced or diced
2 green chilis
1 tbs chili garlic paste (you can use fresh garlic and ginger, I also like to add some coriander to the garlic)
1 tsp cumin
1 tsp turmeric
1 tsp red chili pepper (as per taste
1 tsp salt ( as per taste)
1 cup yogurt
1 cup cream (to give it that rich creamy tasty this also makes the chicken so soft and yummy)
2 tbs milk
2 tbs olive oil
1-2 drops of red food coloring optional( to give it that nice red coloring)

This is so easy Just get a big bowl put everything in together, and mix well with your hand
put in the refrigerator for about 15-20 min
Now remove from refrigerator, Preheat oven to 350 pour the marinated Malai Boti into a lasagna pan, cover with aluminum foil and bake for about 20 min
Then remove the foil turn the chicken around using a spatula, and put back in the oven without foil bake for another 10- 15 min. checking occasionaly  Once you see the chicken has dried up all the juices,
Take it out of the oven, and serve hot and warm with naan, rice, or salads...

Tip 1. If you are going to use meat or lamb this will need to be marinated for about 1-2 hours

       2. If you know your going to cook this meal just marinate everything  put in the refrigerator in the morning or evening and use it when your ready to cook.

       3. using meat or lamb will have to cook more than the chicken for about 1-2 hours in order for meat to get tender.
