Mouthwatering Tandoori Chicken White Rice and Veggies

This recipe is to die for so satisfying yet simple, and made in no time. So if your planning on a Chicken menu today. this is something definitely to try.

Ingredients Serves 4-6 very hungry people
2 pounds of chicken breast or 1 big whole chicken washed and cut into pieces
1 onion 
4 pieces of garlic
2 slices of ginger
3 green chili peppers
1 box of shaan Tandoori Masala
1 cup of yogurt 
1 tea spoon of salt
1 baking pan 3 tbs of oil 

For the white rice
2 cups of basmati rice
2 tbs salt
1 tbs cumin
1 tbs oil

For the Veggies
1 can of whole kernel corn
2 potatoes 
1 big onion
2 tomatoes
2 bell peppers
1 tbs salt
1 tbs black pepper
3 tbs of oil 
First prepare the chicken. Add chicken to a big bowl
Put ginger, garlic, chili's, tandoori masala, yogurt, and salt into a blender and blend on medium for about 2 mins.
Add the paste to the chicken mix well, cover and put to a side or in the refrigerator for about 1-2 hours
Then grease pans with oil, and place marinated chicken in the pan cover with aluminium foil and bake at 350 degree's
After about 20-25 min remove foil and turn chicken around slightly brush with a little bit of oil to keep them moist. Keep baking until the chicken is completely cooked and has absorbed all the paste
Pour 3 cups of water in a pot add cumin, salt, and oil cover until water boils
Now add the rice stir, and keep cooking on medium flame, when the rice starts absorbing water cover the lid  with a damp cloth or wash cloth and cook on very low flame so  the rice turns out soft and fluffy.
Now prepare the Veggies 
Add oil to a non stick wok or frying pan 
Then add in sliced onions and fry until they become nice and golden brown
Now add in tomatoes, potatoes, bell peppers, salt, corn and black pepper
Stir cover, and cook on medium flame for about 15 min add a couple of tbs of water
if the veggies tend to stick to frying pan
Now garnish your platter with the rice chicken and veggies. Serve Hot with Barbeque Sauce and a Cold drink...ENJOY.....................
