Shahi Tukdi or Bread Rasmalai

Last week I was thinking of what dessert to serve for our family get together, and suddenly I thought of Shahi Tukdi or you can call it Bread Rasmalai.This was a recipe i found out of a magazine many years ago, and every time I make the dessert everyone keeps asking for more.Instead of going through all the hard work of regular Rasmalai, you can make this dessert much more quickly.Shahi Tukdi Basically consists of very simple ingredients and is very fun and easy to make

Ingredients.serves 4-6
prep time 10 min 
cook time 15-20 min
8 slices of bread white or wheat 
oil for frying
whole milk 4 cups
sugar 1/4 cup
almonds and pistachios 5-10 pieces each
green cardamon/elachi 4 pcs
saffron kesar 4 strands

For sugar syrup:
2 cups water
1/2 cup sugar
2 cardamon seeds

Discard the ends sides of the bread and cut into triangle shapes, or any shape of your choice
Heat oil in frying pan, and fry bread lightly on each side until they become nice and golden brown
Let the fried bread cool
Crush the cardamon seeds in a grinder, and chop almonds and pistachios for garnish
Now prepare the Sugar Syrup add water to a pot, add sugar, and cardamon seeds let boil for about 15 min until it becomes a thick syrup, Then let cool on the side for about 10-15 min
Now prepare the milk pour the milk in a pot add sugar and cardamon seeds
Let boil  until you see the milk become thick and creamy. 
Now start by adding the fried bread in to the sugar syrup dip on both sides and place on a platter once you have done all the bread
Pour the cooled  milk over the Shahi Tukdi and garnish with almonds and pistachios
Cool in the refrigerator for about 1-2 hours and serve chilled
Tip do not use hot bread let each method cool other wise you will have soggy shahi tukdi's
