Eggplant Stir Fry

When most of us think of Eggplant we think "How Boring" I always had a problem with my husband when I would say I'm making eggplant (vainger called in india and Pakistan) So I came up with a recipe that I know everyone in my family would be licking there fingers with. Egg plant Stir fry I usually serve the dish with hot naan or white rice, and soy sauce.. If you're a veggie lover like me  Give it a try today..
Ingredients:serves 4-6
prep time 10 min
cooking time 15 min 
2 round or 4 long eggplants diced/or cut long wise
1 large onion
3 large tomatoes
2 green chili's
3 tbs olive oil (or any oil you may prefer)
1 tsp salt
1tsp turmeric
1tsp red chili powder
1 tsp crushed cumin (zeera)
Method:
In a wok or pan add oil then add onions stir fry for about 5 min
Add eggplant stir with a wooden spoon
Now add tomatoes, peppers,salt,chili pepper, turmeric stir and cover for about 10-15 min cooking on med flame
Add crushed cumin top with fresh green cilantro or green onions and serve hot....
