Festive Sindhi Biryani

This is one of my recipes I love to use on special occasions like Eid Diwali etc
Rather than the regular biryani Sindhi biryani is more spicy and tastier.Its a Special Rice and Biryani dish Originating from the Sindh Provine of Pakistan,and i like to add the festivity to it with some food coloring.

So here is the recipe..
For 8 servings

For the rice
 4 cups long grain rice (any basmati etc)
6 cups of water
1 teaspoon salt
1tea spoon oil

For the Chicken Gravy
2 pounds of chicken (legs,whole,breast)
1/4 cup of oil any ( i prefer olive oil)
2 onions (medium sized)
4 tomatoes (medium sized)
3 green chili peppers
1 tea spoon salt
1 box of Sindhi Biryani Masala (any brand)
1 cup of yogurt
1 table spoon garlic ginger paste
2 cups of water
cilantro, tomatoes,and festive food colorings..(any kind or brand)

Put the water in a pot to boil on high flame add salt and oil. Presoak your rice 15-20 min prior to boiling
Cover and boil for about 10-15 min, when the rice is half way done,strain and put to aside.

Now cook your Chicken gravy.Add your oil to a pan once the oil is hot enough put in the onions,and fry until the become light golden brown then add your chicken,garlic, ginger,tomatoes,chili peppers Sindhi biryani masala,and salt.Cover and cook for 15 min.Now add your 1 cup of yogurt and cook for another 5-10 min.once you see the gravy releasing oil or frying add in 2 cups of water. cook for another 10 min. remove from heat.

Start the layering: get a pot or a big pan(any you desire) put a little drizzle of oil at the bottom,or use a spray (pam etc) then add your first layer of rice cover with the chicken gravy, add second layer of rice,then cover with chicken gravy, now sprinkle some white rice over top, add your tomatoes,cilantro and a little bit of food coloring.Put the flame on very low heat cover Biryani,and put on dum. for about 10 min or until steam starts to evaporate...
